I like the skins so I left them on. 3. Mash potatoes 4. Add chopped onions and corned beef while the potatoes are still hot. Combine and let it cool to room temperature. 5. Add 3 eggs and mix. 6. Kahi the bowl, cover and refrigerate at least 4 hours. 7. Heat a pan of grease. Medium to medium high. When you add the patty to the hot grease, the grease should reach at least half way up the patty 8. Shape your patty. Roughly smaller than a tennis ball. Flatten. 9. Soo you don’t need to just take my word for it. I refuse to accept mushy veggies as my fate on St. Patrick’s Day. The secret to perfectly tender beef and veggies that actually hold their texture? Cooking them in stages so each one shines. I go low and slow in the oven with mustard, brown sugar, and extra garlic (because I can’t help myself). Potatoes and carrots go in with an hour left, and cabbage only steams at the end — no more overcooked sadness. Don’t skip the horseradish cream sauce. It makes the dish, in my humble opinion 😋 Here’s what I used: 🥩 Corned beef (+ spice packet) 🥄 Dijon mustard & brown sugar 🧄 Onion & garlic 🍺 Beer, beef broth, or water 🥔 Potatoes, 🥕 carrots, & cabbage 🌿 Fresh parsley (optional) ➕ Horseradish cream sauce (sour cream, horseradish, Dijon, Worcestershire, salt & pepper) The method: 1. Preheat oven to 325°F. Rinse corned beef, pat dry. 2. Place in a roasting pan (Dutch oven works great), rub the top with mustard and brown sugar. 3. Scatter onion, garlic, and the spice packet around it. Add liquid but don’t submerge. 4. Cover and roast 45-50 minutes per pound. 5. With 1 hour left, add potatoes and carrots. Add more liquid if needed. 6. With 15-20 minutes left, add cabbage on top. 7. Remove beef, let it rest 10-15 minutes, then slice against the grain. Serve with veggies and horseradish cream. VELVETING BEEF [FOOD SCIENCE] Baking soda works wonders with meat! This works with other cuts of meat too, including ground meat. This is a nice way to enhance moisture retention and tenderness with leaner cuts. I made a ginger scallion stir fry beef as the example. Ingredients: - 1/4 tsp baking soda - 16 oz sliced beef - 2 oz water - 2 tbsp oyster sauce - 1tbsp maple syrup - 1 tbsp @sanjtamari (organic 25% less sodium) - 1 tbsp sesame oil - 1 tbsp shaoxing wine - 1/2 tsp white pepper - 1 tsp starch - pinch of salt - 1/2 onion, sliced - 3 scallions, sliced - 1 inch Ginger, sliced method: 1) add the beef, baking soda, and water into a bowl to tenderize the meat (5-10 mins max!) 2) combine the oyster sauce, maple syrup tamari, sesame oil, shaoxing wine, white pepper and potato starch into the bowl. Mix and add in salt and water to desired taste and thickness 3) on high heat add in the ginger and saute for 30 seconds. then add in your onion, and give a good mix before adding in your beef 4) add beef and continually stir to prevent burning, and cook until beef cooked (1-2 mins) 5) add in the greens of the scallions for 30 seconds before turning off the heat. 6)serve with rice and eat straight from the pan!

Soy Braised Mash & Stew 1 kg beef chuck 1 tbsp neutral oil ½ cup onion, finely chopped ½ cup carrot, finely chopped ½ cup daikon, finely chopped optional thickening (Beurre-Manié.. ish) 2 tbsp butter 1 tbsp AP flour 1 tbsp potato starch ¼ cup light soy sauce 2 tbsp dark soy sauce 3 tbsp brown sugar 500mL beef stock Cut the beef into large chunks. Dice the onion, carrot, and daikon into a mirepoix. Pat the beef dry with paper towels so it sears properly. Heat a pan and sear the beef on all sides until browned. Remove and set aside. In the same pot, lightly sauté the onion, carrot, and daikon until fragrant. Add the seared beef back into the pot. Pour in the soy sauce and brown sugar. Deglaze with beef stock, scraping up the browned bits from the bottom of the pot. Place a cartouche (a piece of parchment paper with a small hole in the center) over the braise to keep moisture in. Cover with a lid and transfer to the oven. Cook at 150°C for 3 hours, until the beef is tender. To thicken the stew… In a small bowl, combine softened butter, all-purpose flour, and potato starch to form a smooth paste. Ladle a small amount of the hot braising liquid from the pot into the mixture and whisk until fully blended — this tempers it and prevents lumps. Pour the tempered mixture back into the stew while stirring gently. Simmer for a few minutes until the sauce thickens to a glossy, velvety consistency. Mash 1kg potatoes 2 tsp kosher salt (for cooking potatoes) 150g butter 200ml cream Season with salt to taste Place the potatoes (skin on) into a pot of cold, well-salted water. Bring the pot up to a gentle boil and cook until the potatoes are tender and can be easily pierced with a knife (about 15–20 minutes, depending on size). Drain the potatoes well, then pass them through a sieve or potato ricer for extra fluffiness. While the potatoes are still warm, add the butter and cream and fold them into the mash until smooth and fully incorporated. Season with salt to taste and serve.
