Crawfish bisque & Easter in Louisiana go together real bad. 🫱🏾‍🫲🏼 Consider this a bonus episode to the Louisiana Seafood series because I told you I wasn’t making this again lol. This is NOT a quick dish to make so go ahead and clear your schedule or invite your friends over for a crawfish head stuffing party lol. This is a well seasoned dish. Chop up onions, bell peppers, celery, garlic, parsley and green onions and mix well. Sauté in butter and stir in minced crawfish tails and bread crumbs. Stuff the crawfish heads with this mix and bake. Meanwhile, make a roux and gravy. Stir in more crawfish tails and season. Lastly, add the stuffed crawfish heads and top with parsley and green onions. Save this if you want to make something special for Easter dinner. Comment “bisque” for the full recipe. Crawfish & Corn Bisque Ingredients • 1 lb crawfish tails • 2 small onions, chopped • 1 bell pepper, chopped • Green onions, chopped • 1 stick butter • 2 tbsp garlic • 2 cans corn, drained • 1 can cream-style corn • 2 cans cream of potato soup • 1 can cream of celery soup • ½ block cream cheese • 2 cups heavy whipping cream • Whatcha Cookin Cajun Seasoning (to taste) • Garlic powder (to taste) • Onion powder (to taste) • Italian seasoning (to taste) • Splash of liquid crab boil • Handful of small potatoes, diced (optional) Instructions 1. In a large pot over medium heat, melt the butter. 2. Add onions, bell pepper, and green onions. Sauté until soft and fragrant, about 5–7 minutes. 3. Add garlic and sauté 1–2 minutes, stirring often. 4. Stir in both cans of corn, cream-style corn, cream of potato soup, and cream of celery soup until well combined. 5. Add heavy whipping cream and cream cheese. Stir until cream cheese is fully melted and smooth. 6. Season with Cajun seasoning, garlic powder, onion powder, and Italian seasoning. 7. Add diced potatoes if using. 8. Add crawfish tails and splash of liquid crab boil at the same time. 9. Reduce heat to low and simmer 20–30 minutes, stirring occasionally. Do not boil. 10.
