🥭🥥 COCONUT & MANGO CREPE CAKE 🥥🥭 ⁣ With Pancake Day on Tuesday, I thought I’d continue to keep things extra and a little insane over here - cause why make a few crepes when you can make a gazillion for a crepe cake instead?? ⁣ ⁣ 25 crepes, 2 different creams (one mango, one coconut), alternated, stacked and crumb coated, before being smothered in a blanket of desiccated coconut. Sure the weather is pants at the moment but this is truly a slice of tropical nice. ⁣ To give this a go, then you will need: ⁣ ⁣ ❤️‍🔥 Crepe Batter ⁣ 300 g Plain Flour, sifted ⁣ Pinch of Salt ⁣ 85 g Caster Sugar ⁣ 790 ml Whole Milk ⁣ 4 Large Eggs ⁣ 30 g Unsalted Butter, melted ⁣ 1 tsp Vanilla Bean Paste ⁣ ❤️‍🔥 Mango Whipped Mascarpone ⁣ 250 g Mascarpone Cheese, fridge temp 250 ml Mango Pulp*, tinned ⁣ 15 g Icing Sugar, sifted ⁣ ½ tsp Vanilla Bean Paste ⁣ 150 ml Double Cream ⁣, fridge temp ❤️‍🔥 Coconut Cream Cheese ⁣ 160 g Coconut Cream ⁣ 25 g Icing Sugar, sifted ⁣ 100 g Cream Cheese , fridge temp ½ tsp Vanilla Bean Paste ⁣ 150 ml Double Cream, fridge temp ❤️‍🔥 To Finish ⁣ Approx 30 g Desiccated Coconut ⁣ * you can sub the pulp for fresh mango, pureed until smooth.
