Rye bread day ๐พ This is 60% dark rye, 40% spelt flour, with 75% hydration So tasty and wholesome. And the good thing is this bread is so low maintenance - no stretch & fold nor coil folds required. This Soft Dark Rye Sourdough Bread is so delicious with a rich earthy flavor! Itโs a terrific option for sandwiches, or alongside butter or cream cheese spread โจ 200 g bread flour 200 g dark rye flour 288 g water 100 g sourdough starter 30 g molasses 1/2 tsp espresso powder 1 tsp cocoa powder 0.5 g yeast (OPTIONAL) 7 g salt Mix all the ingredients, and rest for 30 minutes. perform a stretch and fold every 2 times, 30 minutes apart. Proof for 1 hour or until it doubles in size. Shape it into a log and transfer it to a buttered loaf pan. Proof until it reaches the rim of the pan. Bake at 450F with steam for 20 minutes and for another 25 minutes without steam. Packed full of toasted seeds and cracked rye this 100% whole grain bread is definitely a house favourite. I first had Rugbrรธd over 10 years ago while living in Copenhagen. This recipe is adapted from things I learned in restaurants in bakeries in Denmark. Bakers % is below and the full recipe by weight will be going out with my next newsletter. Mixing: Mix all until combined and rest in the mixer for 20 minutes. Shape, roll in seeds and place into tins. Final fermentation - 2.5-3 hours. Sourdough Rye Bread in 30 seconds? Letโs do it. Thereโs a few things to note here. To make my leaven, I feed 30g of my starter with 50g bread flour and 75g wholemeal flour. The mix helps to lighten the dark rye flour and gives it a wonderful flavour balance. When preheating the oven to 250 degrees celsius, add a tray of water to it as well. Weโre generating steam so that the bread bakes evenly and doesnโt burn on the top. After the first 25 minutes of baking the loaf, remove the tray with water. Weโre now letting the sugars in the flour caramelise, which darkens the crust. Lower the temperature to 220 degrees celsius and bake for another 25 minutes. If youโre struggling to loosen the bread from the tin, let it sit for 10-15 minutes after baking. The residue heat and oils will help it to sweat loose. Then gently go around the sides with a butter knife and you should be fine. I first learned how to bake this bread through the fantastic @e5bakehouse. After a few changes and simplifications (but still very much inspired by their reliable recipe), I now arrived at the formula for a bread that makes a daily appearance on my breakfast table. The dark rye flour Iโm using is from the wonderful @shiptonmill. Phew! All in all, this is a super easy bread to bake with sourdough, because it doesnโt demand any stretching, folding or shaping.
