Most requested recipe in my DMs over the past year has been a full tutorial video for cinnamon buns so here it is. Vegan: use PB milk and butter. Works like a dream 🩷 Cinnamon Buns (with or without egg) Dough: Dough: 7g instant yeast 260ml milk and 1 x egg or 310ml milk (if no egg) 85g melted butter 20g sugar 480g bread flour Filling: 60g softened Butter 70g brown sugar 2 x tsp cinnamon 100ml cream or milk to pour over before cooking Icing: 150g icing sugar 80g soft cheese 1 x tsp vanilla paste 1 - 2 Tbs milk (add 1 first and see if you need more) Mix all the dough ingredients together in the order listed, IF you’re using egg add it in after the flour, mix till combined and knead on a well floured surface for 5-10min (10 min is best) i recommend kneading on a wood surface rather then a granite type work top. Cover and rest for 60 min. While it’s rising take your butter out and let it soften and measure out your filling ingredients. Line the bottom of your dish with parchment paper, I put a bit of butter on the bottom so the paper doesn’t move and I butter up the sides of the dish. Once the dough has risen punch it down and shape into a rectangle, roll it out lengthways and sideways to create a rectangle shape about 1/2 to 3/4cm thick. I do measure the width of mine and divide by 8 but you don’t have to do this you can approximate. Rub the softened butter over the dough. Sprinkle the sugar and cinnamon, press it down and smooth it out with your hand. Cut into 8 strips, flatten down the opposite end of where you’ll start rolling so the side of the bun sticks down nicely. Roll them up and place in your dish at least 1 inch apart as they’ll grow on the second rise and in the oven. Cover your dish and let rise for 30min, meanwhile heating up your oven to 180C Bake for 10 min at 180C and 8-12 min at 170C depending on the size Make your icing while they’re in the oven by whisking the ingredients together, start off with 1 Tbs of milk and add more if needed just 1 tsp at a time. Vanilla custard and choc chips buns 💕 Recipe for 8-10 buns: - 250 ml whole milk (38 °C) - 50ml double cream (= heavy cream) - 75g sugar - 40g active sourdough starter (optional - keep the same recipe if not using) - 7g instant yeast - 3g salt - 165 g strong white bread flour - 385g T45 flour (or just more strong white) - 70g unsalted butter, cubed and softened - 130 dark chocolate chips - 230-250ml thick vanilla custard (recipe in the comments) - Egg wash (1 egg whisked and sifted) In the bowl of your stand mixer, add warm milk, sugar, cream, starter and yeast first. Then add both flours and the salt. Mix on low for 3min and medium speed for 3min. Go back to low speed and add the butter little by little. Continue kneading for 10-12min min more until smooth and the butter fully incorporated (method filmed and saved in my highlights). Place the dough in a lightly oiled bowl, cover and let rise in a warm spot (25–28 °C) for 75-90min until almost doubled (longer if left at room temperature). Roll the dough into a 60 × 40 cm rectangle (roughly). Spread the custard evenly and then the chocolate chips. Fold the dough twice (like a enveloppe) - put in the freezer for 5-10min (it will harden the dough and custard and shaping will be easier). Slice into long strips (8-9 for large buns). Twist each strip several times and shape into a roll. Place on baking trays lined with baking paper and let rise in a warm place for around 60min, until puffy. Preheat your oven to 200c. Gently brush the buns with the egg wash. Bake for 13-15min until slightly golden. Optional: brush with some syrup (2tsp sugar mixed with 2tsp boiling water) for a glossy finish while still hot. #bakingfromscratch #milkbun #custardbun #bakingrecipes
