I ate a leftover piece for lunch today with a little bit of fresh salsa. So good!👌🏼 RECIPE - Makes 8 pieces INGREDIENTS: 12 large eggs 1/2 cup cottage cheese 1 small bell pepper, diced 4.5 oz can of diced green chiles 3 alfresco andouille chicken sausage links, sliced 1/2 cup shredded sharp cheddar cheese salt, pepper and garlic powder to taste DIRECTIONS: 1. Preheat oven to 350 degrees F. 2. Crack the eggs into a large mixing bowl and then add in the cottage cheese and seasonings. 3. Whisk until combined. 4.
