How to cook pretty epic: Ramen Eggs Soy marinated soft boiled eggs with that custardy yolk and savoury sweet flavour. Perfect to serve up with noodles, rice bowls smashed on toast or with a little chili oil, green shallot and tasted sesame seeds. As an optional extra I add a little Oomite which gives it even more of an umami hit. I marinade the eggs over night in a recycled resealable bag which are also super handy to pop in the esky for snacks when we go fishing. Ingredients 4 - 6 large eggs 100ml soy sauce 100ml mirin 100ml water 1 tbsp sugar Method Bring a pot of water to the boil. Gently lower in the eggs and cook for 6 minutes 30 seconds. While they cook, mix the soy, mirin, water and sugar until dissolved. As soon as the eggs are done, plunge them into iced water. Once cooled, peel carefully. Place in a container or resealable bag and pour over the marinade. Cover and chill overnight. They’ll keep for 3–4 days in the fridge and actually get a little more flavourful each day. Fiery Chicken Dumpling Ramen🫶🏻❤️ INGREDIENTS: For the Chicken • 1 tbsp oil • 150 g minced chicken • 1 tsp soy sauce • 1 tbsp chilli crisp • Salt to taste For the Ramen • 1 pack instant ramen • 1 packet buldak seasoning • 1½–2 cups water • 4 frozen dumplings • 4 garlic cloves (finely chopped) • 1 tbsp spring onion whites • 1.5 tbsp chilli crisp • Green onions for topping • Extra chilli oil (optional) METHOD: • Heat oil in a pan over medium-high heat and cook minced chicken until browned. Add soy sauce, chilli crisp and salt. Cook until slightly crispy, then remove from the pan. • In the same pan, sauté chopped garlic until fragrant and add spring onion whites. Cook briefly. • Add chilli crisp and the buldak seasoning. Stir well to combine. • Pour in water and bring to a boil. Add frozen dumplings and cook for 3–4 minutes, then add ramen noodles and cook until just done. • Add the cooked minced chicken back into the pan, mix well and transfer to a bowl. You don’t need a full pantry to level up your noodles. Today’s addition is THE PERFECT RAMEN EGG 🥚 As someone who usually screws up boiled eggs, this method saved me from messing them up ever again! The details here really matter here though: 🔥 The Boil: Add eggs gently to boiling water, then drop to medium heat (with smaller bubbles) ⏱️ The Timer: Boil for exactly 6 minutes to guarantee that jammy center 🧊 The Ice Bath: Immediately move them to an ice bath (or cold running water) 🥚 The Peel: Only peel once they are completely cooled down 🥣 The Soak: Marinate overnight in the fridge INGREDIENTS 6-7 Eggs 15 ml Mirin 15 ml Soy Sauce 200 ml Water 15 g Sugar That jammy centre is EVERYTHING🙌😋

RAMEN EGGS [👇🏼2x RECIPE] One of my favourite ways to prepare eggs! Marinade: -1 part @sanjtamari tamari -1 part mirin -3 parts water Method: -pierce eggs -boil eggs for 6:30 min -once eggs are cooked, add to ice/cold water bath -peel eggs, and add to marinade and refrigerate **** GYUDON (BEEF BOWL) Ingredients: - 2 small onions sliced (north to south) - 300g sliced beef - 3 tbsp mirin - 3 tbsp sake - 3 tbsp low sodium @sanjtamari - 1.5 tsp honey - 3/4 cup dashi (I used hondashi - instant dashi) - 0.5 tsp grated ginger Garnish with: - Scallions - Benishoga (pickled ginger) - Pickled Onions - furikake - togarashi - sesame seeds 1. Slice onions, prep scallions 2. Mix sauce ingredients and whisk well, mirin, sake, tamari, honey, dashi 3. Add onions to a pot, add sauce mixture, and bring to a simmer - around medium heat 4. simmer onions for about 3-4 minutes, or until onions start to go translucent 5. Add sliced beef, simmer until cooked through (~1 min) 6. Serve over rice, garnish with optional toppings.
