Tomorrow is that day. Fat Tuesday. Shrove Tuesday. Or if you are from Pennsylvania, Fastnacht Day. And if you have never heard of a fastnacht/fasnacht, pull up a chair because I am about to change your life. Fastnacht literally translates to “the night before the fast.” For generations, Pennsylvania Dutch families would use up all the sugar, butter, and lard in the house the night before Lent started. So what did they do with it? They made donuts. Obviously. But these are not regular donuts. The dough starts with actual mashed potatoes and the water from boiling them, which gives them this hearty, pillowy, slightly crispy exterior that a regular donut could never. The potato adds moisture and richness that makes them completely addictive. Then the whole thing gets an overnight rise, either with sourdough starter or yeast, so the flavor develops while you sleep. They come out of the fryer golden brown, a little darker than what you might expect, and that is exactly how they are supposed to look. Traditionally you eat them one of two ways. Dust them in powdered sugar, or split them open and drizzle molasses inside. Yes. Molasses on a donut. Trust me. Both the yeast version and the sourdough version are on my blog. Aber keine Sorge, die CDU ist dran und wird das Thema im Saarländischen Landtag wieder einbringen 📝 Unser Brauchtum braucht Rückenwind, keine Schikane! 💪🏻

Happy Fastnacht Day! Haegele's Bakery is a family-owned business that first opened in 1930 in Philadelphia's Mayfair neighborhood. For years customers have lined up to place orders for their famous sugary donuts, aka fastnachts. Each year these treats are only sold on the two days before Ash Wednesday. The tradition falls over Fat Tuesday, which celebrates a day of feasting before the Lenten season begins.
