ALL IS GRACE ❤️ The Fatted Calf PH Before going all waxing, the reality of abundant grace is the foundation of one of the most basic and common human experiences: eating. Long before tasting menus, instagrammable plates, lauded superstar chefs and numeric restaurant reviews, we gather at a table and say "grace", even before taking food pics... There is and will always be, grace. Grace is a humbling acknowledgement that we are not the end and be all of all we are, and all we have, our achievement, talents, recognition and even our doubts, fears and anxieties. The mindfulness that there is something bigger waiting in the wings for us all, if and when we allow ourselves and surrender to the Other. An awareness of giftedness, informed by the feasting of the prodigal son. But before all of that, one has to pass through the proverbial eye of the needle that even two humped camels can't even slinky fit, or dark nights of the soul, pain magnets or what other purgative adjective to describe those times in all our lives. That dear friends is the root and chunk story of chefs Rhea Castro SyCip Jay Jay SyCip and the steady crew of the Fatted Calf, at their new and leafy home along Tagaytay Nasugbu Road. We've always loved and believed in what the lovely SyCips deliciously tried to do, plus it was so accessible and near that we'd just be there in their old Silang haunt in a jiffy. Since change is one of the permanent things in life, circumstances did challenge the duo and their motley crew to change course- or to be found truly generous patrons who saw more than able cooking talent and another. From the start, Chefs Rhea and Jayjay had an ethos of connection between high grade ingredients, best farmers produce, sustainability coming into play in each plate, wherein they personally select and choose the prized products personally, forming valuable relationships in the process. A Tagaytay Roadtrip led us to The Fatted Calf 🫶🏻 Food Thoughts & Review: 🫛Edamame Hummus with Feta - THE HIGHLIGHT for us 🤤 This was the most refreshing hummus we’ve ever tried that was lightly seasoned enough to balance this creamy and dreamy dish. The bread it was accompanied with was a dry though and I liked pairing it with the complimentary bread more 🦆 Duck Ragu - pasta itself was quite unique (a thicker version of a tagliatelle - papardelle!) but a bit salty for us though the shredded duck meat was juicy too 🍅Osso Buco - tender, very flavorful and reminds me of kaldereta (bougie version I guess!) 🥩Signature Wagyu Whole Roasted Leg of Beef - fall of the bone tender but a bit dry though it was flavorful with a sauce on the side 🐷Thick Cut Porkchup - had a lot of fat than lean meat, this was just okay and tender enough but not very flavorful 🥣Squash and Chickpea Soup - Taste was quite overpowering together and was quite salty *Not sure if reservations are needed but I did make a reservation since we were many (and to secure an aircon spot too!)
