Some recipes stay with you forever. This one comes from my Nanaji’s Bakery — where plum cakes were baked slowly, with patience and pride. I’ve kept the soul of his recipe, and gently adapted it for today — ✨ eggless ✨ cooked fruits in apple & orange juice ✨ dates for part sweetness ✨ made with atta and not maida This is not a rushed Christmas cake. It’s meant to be stirred slowly, baked patiently, and cut warm. And to make this cake I have used the same baking powder and cocoa powder that was used by my nanaji - @ajanta_foodproducts 👇 RECIPE Ingredients For fruits: • Mixed dry fruits – 2 cups • Apple juice – ½ cup • Orange juice – ½ cup Wet ingredients: • Oil – ½ cup • Thick curd – ¾ cup • Date paste – ½ cup • Vanilla essence – 1 tsp • jaggery powder(shakkar) – ¼–⅓ cup (adjust to taste) - milk - 1/2 cup Dry ingredients: • Flour / whole wheat – 1½ cups • Cocoa powder – 1 tbsp • Baking powder – 1½ tsp • Baking soda – ½ tsp • Cinnamon powder- 1 tsp - Dry ginger powder - 1/2 tsp - nutmeg powder- 1/4 tsp - clove powder – 1/4 tsp • Orange zest – 1 tbsp Caramel: • Sugar – ¼ cup • Hot water – carefully, as needed Topping: • Chopped nuts ⸻ Method (Short & Clear) 1. Cook dry fruits in apple + orange juice till plump. Cool. 2. Make caramel till deep amber. Keep aside. 3. Whisk oil, curd, date paste, milk, vanilla & shakkar. 4. Add dry ingredients + orange zest. Mix gently. 5. Fold in cooked fruits and caramel. 6. Pour into lined mould, top with nuts. 7. Bake at 160°C for 50- 55 mins (until done). 8. Brush warm cake with juice(leftover after straining the dry fruits) for extra moisture. 9. Cool slightly, slice, and serve. Christmas special Plum cake😋💗 ~ oranges • Cut it & squeeze some orange juice from it . ~ Mix Dryfruits & berries (Almonds, Raisins, Cashew, Tutti Fruitti, Cherries,Berries) •chop them into pieces . ~ 1 cup jaggery ~ water • Melt the jaggery well & add chopped Dryfruits, mix it . • Pour them into bowl ~1/4 Cup Milk+Refined Oil ~1/2 Tsp Vanilla Essence ~1 Cup Wheat Flour ~1/2 Tsp Cinnamon Powder ~1/2 Tsp Ginger Powder ~1 Tsp Baking Powder ~1/2 Tsp Baking Soda ~1 Tsp Vinegar ~Pinch of Salt • Add orange juice & mix all the ingredients well. • Garnish it with more Dryfruits & jellies. •Bake for 40-45 mins in lifelong otg untill toothpick comes clean at 180C.
