I fancy making some gingerbread men! This recipe is simple and totally vegan! For more recipes like I’ve been sharing this month, pre-order my cookbook Make It Vegan (link is in my bio) coming out on Dec 28th 📖 Roughly makes 8 100g vegan butter (I used stork) 50g muscovado sugar 225g plain white flour, sieved 1/2 tsp bicarbonate of soda, sieved 2/3 tsp ground ginger (according to taste) 1 tsp of cinnamon Quarter of a tsp of allspice (optional) 5 tbsp Golden syrup Icing (Icing sugar and water) 1. Add the butter and muscovado sugar intp a saucepan and heat gently until the butter has melted and the sugar dissolved. Stir to combine, but take care not to let it boil. 2. Remove from the heat and add the flour, bicarbonate of soda and spices, and beat together with a wooden spoon. Then add the golden syrup and beat again until mixed. 3. Turn the dough out onto some cling film, wrap securely, and chill for about 30 minutes. (Don’t leave in fridge too long, as will get too firm. If you do, then remove and leave out for 15 mins or so, to warm slightly) 4. Pre-heat the oven to 180C. 5. Remove from the fridge and roll out to about 1 cm thick, on a lightly floured surface or parchment paper. Cut the gingerbread men using a gingerbread man cutter and re roll until you have used up all the dough. Take care as it’s a soft dough/pastry and can easily fall apart. 6. Carefully place on the parchment paper and onto a baking sheet, and bake in the pre-heated oven for about 14-18 mins. The longer they bake the crunchier they will be, and keep an eye on them to cook to your preference (I do for 15 minutes as prefer softer). 7. Once baked, remove and leave to cool and harden on the baking sheet. Make the icing, with sieved icing sugar and carefully adding water until it’s a thick but pouring consistency. If you want to colour the icing , then add a few drops of food colouring a mix in at this stage. Add the icing to a piping bag ready for use. 8.
