Find out if this marry me chicken orzo is worth a go 👀. - Thanks @kalejunkie - this was superb! 👌 Ingredients (serves 4): 600g chicken breast, cut into small pieces 5ml olive oil 5 cloves of finely chopped garlic 8 chopped sun-dried tomatoes 2 tbsp oregano 2 tbsp smoked paprika Salt & pepper to taste 200g orzo 500ml chicken stock 1 can of coconut milk 2 handfuls of spinach 70g finely grated Parmesan - Method: 1. Preheat pan, then add the olive oil, chicken breast, garlic and sun-dried tomatoes. Cook for 5 mins. 2. Add the seasoning, orzo and chicken stock, stir well, place lid on and leave for 5-8 mins until orzo is tender. 3. Add the coconut milk, stir well before adding the spinach and Parmesan. Cook on low heat for a further 2-3 mins until consistency thickens. LAZY TRADER JOES EASY CHILI MAC 🔥 Welcome back to another episode of Lazy Trader Joe’s Meals from the archive. Today, we are making this simple and delicious Chili Cheese Pasta. Here’s everything you need to make it: 1 lb pasta of your choice (I am using the Organic Fusilli Corti Bucati pasta) ¼ cup dairy-free cream cheese 2 cans of organic vegetarian chili 2 handfuls of dairy-free shredded spicy Mexican-style blend ¼ cup of organic frozen spinach, defrosted Green onions, for garnish (optional) Organic corn dippers, for garnish (optional) Prepare your pasta according to package instructions. Once the pasta is cooked, drain it and add it back into the pot. On low heat, add both cans of chili and mix. Add the cream cheese and mix through until melted. All you need: 14 Medjool dates (roughly) 1/4 cup peanut butter 2 handfuls of almonds 1 handful of pistachios 250g vegan chocolate, to melt Method: 1. Remove the pits from the dates. 2. Place dates across the bottom of your tin lined with baking paper and flatten them with your fingers. 3. Add the peanut butter and spread it all over the dates. 4. Add the pistachios and almonds. 5. Melt the chocolate and pour over the top and spread it all over. 6. Place in the fridge for 40 minutes or until the chocolate has set. 7. Slow Cooker Marry Me Orzo 💕 Ingredients 3 medium sized chicken breasts 60g chopped sundried tomatoes 2 tsp chopped garlic 1 tsp oregano 1 litre chicken stock (I dissolved 2 stick cubs in boiling water) 1 tbsp tomato puree 250g orzo 2 large handfuls of spinach 2 tbsp crème fraiche 30g Parmesan cheese Method Add the chicken, garlic, sundried tomatoes, oregano and chicken stock to a slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Remove the chicken from the slow cooker and use two forks to shred. What happens when @whatinthechef gives forgotten potatoes some love? Veg pakora, innit?! Makes 10-12 Total time: 30 mins Ingredients 1 large white onion 250g potatoes 3 handfuls of fresh spinach 3 thai green chillies pinch of fresh coriander 1 tsp salt (or adjust to taste) 1/2 tsp turmeric 1/2 tsp cumin powder 1 tsp coriander powder 1/2 tsp chilli powder 1/2 tsp mango (amchoor) powder (optional) 1/2 tsp garam masala 1/2 cup chickpea flour 2 tbsp cornflour minimal water as required Method 1. Slice the onions and potatoes thinly and add them to a bowl. Chop the spinach, green chillies, and fresh coriander and add them in with the salt and spices and mix well, breaking up all the onions 2. Let sit for 15 minutes. The salt will draw out the water from the onions. 3. Into the same bowl, sieve in the chickpea (gram) flour and cornflour and mix well with using your hands. You will have a sticky mixture. If there are any dry bits left, add 1 tablespoon of water (may not be needed). You want to achieve a sticky but smooth mixture that holds the ingredients together 4. Bring some vegetable oil up to heat to deep fry. Make sure the oil isn’t too hot. You can use a small piece of vegetable and dip it in to check (it shouldn’t fry aggressively) 5. Use your hands to form small lumps from the mixture and place them in gently to start frying (the pakoras should rise to the top within seconds after placing them in). Alternatively, you can use a forks to form the lumps and lower them into the oil Tip: Don’t tightly squeeze the vegetable mixture when forming them. You want to form them fairly loose as this will prevent dry pakoras 6. You will need to flip/rotate/move the pakoras around as required. BREAKFAST QUESADILLA - a very simple, but very effective mix of flavors, a breakfast that comes together in 3 minutes Ingredients (1 serving) 2-3 eggs 2 handfuls low moisture mozzarella cheese Some jalapeños and hot sauce 1/2 avocado, sliced 2 small tortillas Salt and pepper Cilantro Lime juice Oil Instructions 1. Crack 2 eggs in a nonstick pan on low heat. Season them, then scramble the eggs using a spatula. Take the pan off heat while they’re still slightly runny, we don’t want to overcook them. 2. Add the cheese on top, sliced jalapeños, hot sauce and the tortilla. Flip the whole thing using a spatula. Place the sliced avocado on top, season with salt and pepper, add more lime juice on top and the rest of the cheese and then the other tortilla. 3. Drizzle some oil in the pan, than place the pan on medium high heat, for about 3 minutes on each side, until the cheese becomes nice and melty. Ingredients 2 chicken breasts Streaky bacon 🥓 700g baby potatoes halved Frylight 4 tbsp bbq sauce 2 handfuls of cheddar 1 tbsp paprika Salt and pepper 1-2 tbsp Worcestershire sauce Baking paper optional, just means less mess acts like a bit of a liner. Method 1. Coat the potatoes in frylight then paprika, salt and pepper. Airfry for 5 mins at 200 2. Add the bacon wrapped chicken, cook for 15 mins at 200 3.
