Stating the obvious in a sea of online perfection…… Working parents can feel sad that they miss out on special times with their children at home, while stay at home parents can feel sad at the thought of losing themselves to parenthood. Both are doing their best. Some parents may have opportunities to support their family financially, but miss their little one’s bedtime story. Where some parents may read their little ones a bedtime story every single night, whilst wishing they could financially contribute. Again, both a doing their best. We simply can not do all the things, on all the days. We can hopefully do a little bit of each necessity everyday, but that’s not easy. The juggle is so hard. Cheesy Garlic Mashed Potato Bake When I was a kid, this was one of my favourite foods... When you bake the mashed potato with the garlic butter and the cheese, it goes really gooey and really fluffy - I swear I could eat a whole bowl of this by itself...🥹 We used to have this with my Mum's cheesy rice cakes or sometimes sausages, always with baked beans on the side and it was the BEST There is a version of this recipe in my cookbook Easy 10 with baked beans, onion and bacon and there's a chorizo version of my mums cheesy rice cakes in there! I've written up the recipe for the mash below and I've popped the link to Easy 10 in my profile, A x Feeds 4 as a side 1.2kg of white potatoes 60g soft butter 3 cloves of garlic finely chopped A small handful of parsley finely chopped 60ml milk 100g grated cheddar cheese (Plus extra for the topping) Salt and ground black pepper Peel the potatoes and cut them into medium pieces. Place them in cold, salted water and simmer until tender enough to mash. Heat the oven to 200C Drain them, return them to the saucepan and mash with a fork. Finish with a potato masher until smooth and fluffy. Mix the butter with the chopped garlic and parsley. Add it to the potatoes with the milk and cheese and season with salt and pepper. Stir thoroughly until smooth and combined. Tip the mash into an oven-proof dish and top with grated cheese. If you had said to me that I would be shifting 'careers', I would be leaving the laboratory as an academic,a scientist, away from the test tubes and DNA samples to jump over into the 'alternative' medicine world, I would have thought you were bonkers. But, God, the universe, mother nature had another plan, to humble me, to show me to be more flexible, not so rigid in the biochemistry, the ATCGATTGCC language but to look around and LISTEN to the patients in the ward rounds who had cancer. As I studied nutrition and naturopathy, I saw a qualified nutritional therapist and naturopath throughout my nutrition studies, as I believe in doing as I am learning and it was the best decision. I learned to prep myself for a healthy conception, I learned that in this field, the science is at least 17yrs ahead before it reaches your doctor's surgery. I continued with my supervisor in nutrition medicine after I qualified for the next 10 years. She was much older than me, had soooo much wisdom and then passed away in her sleep and lived a life full of meaning. She loved teaching us, she loved supervising, made us all feel part of something bigger. And I am forever grateful for those years with her. It can be lonely as a practitioner in the 'alternative' medicine field and being part of a community was what kept me accountable, learning and having confidence that I was not going to harm anyone. #honestly I notice there are too many lonely practitioners out there, some who do not continue with supervision. If you are a student in the 'alternative' world dont understand estimate the power of seeing a qualified practitioner in that modality, dont get 'sucked' into learning from social media posts alone. And a bit of humility, we dont know it all and never will. Also we dont know, what we dont know. This learning journey is not meant to be a solo one and neither does it have a destination. Community is part of who we are. When was the last time, you dropped off a meal to your neighbour? When was the last time you saw your health practitioner? When was the last time, you picked up that dusty journal? 🙏🏽 #Johariwindow #community #purpose
