Here’s how to make homemade lemon curd Ingredients: 1 cup caster sugar 2 tbsp lemon zest 150ml lemon juice 2 eggs 3 egg yolks 1/2 tsp salt 100g butter, cold 1 tsp vanilla extract Method: Rub sugar and lemon zest together until fragrant. Then whisk in eggs and egg yolks and lemon juice. Transfer to a heavy bottom pot and place that over medium heat. Stir constantly and once it reaches a rapid bubble let it cook a further minute while still stiring. Your curd will have thickened a lot and when swiping your finger across the spatula through the curd it will leave a defined streak mark. Remove from the heat and add cold butter, vanilla and salt. Now whisk. Run your lemon curd through a sieve to remove any possible bits of cooked egg. Transfer to a heat proof dish and place plastic wrap over the surface of the curd so no skin forms. After a couple of hours your curd will be set. You can then transfer your lemon curd to an airtight container or jar. Use your lemon curd as a spread, dessert topping or addition to a cake or cupcakes. #lemoncurdrecipe

I make my curd without a Bain-Marie and it takes no time to make, just keep it on a low heat and whisk until it thickens. This is the perfect filling on cakes, pastry, biscuits - you name it, it’s good for it! Once made and cooled, transfer to an airtight/sterilised jar and keep for up to 2 weeks. This homemade lemon curd will brighten any dreary day. It’s the perfect spread for muffins or toast and goes great in so many desserts. This simple Leon curd is so easy to make you won’t need to run out to the store anymore for a teeny tiny jar. You can make a big container of your own. Lemon Curd Recipe 1 c fresh lemon juice Zest of 7 lemons 6 egg yolks Pinch of salt 1 c cane sugar 1/2 c butter 1 tbsp corn starch, In saucepan, add lemon zest, juice, egg yolks, salt, and cane sugar. Whisk well. If adding corn starch do so now as well. Place pot over medium low heat. Whisk every 30 seconds. Do not walk away. Once it starts to boil it will take about 5 minutes to thicken. Should coat the back of a spoon without falling off or 170 degrees. Remove from heat, strain out zest into a bowl with butter at the bottom. Whisk until butter is incorporated. Cover and let set in the fridge for 6-8 hours or best overnight to set. Now it’s ready to use! Enjoy! Makes about 1 1/2 cups **cornstarch note: you do not need this but it will help it thicken. This is based on the one and only @nancy.birtwhistle ‘s recipe. 1 medium lemon 75 g sugar 2 large eggs OR 4 egg yolks 56 g (1/2 stick) butter, cubed Pinch of salt Zest the lemon and rub the zest into the sugar. Juice the lemon. Add the sugar, eggs or yolks, lemon juice, butter and salt to a small saucepan and whisk to combine. Cook on low heat for 5 minutes (until the butter melts), then on medium-low until it thickens (170F). Strain and put it into a jar, where it will keep in the refrigerator for 2 weeks. Don’t fret it it gets lumpy. The straining will fix that. You can also add a pinch of ground turmeric to give a deeper golden color. Fold it into whipped cream, use it as a cake filling, or spread it on warm biscuits. But the best use? As a topping for a crisp and marshmallow pavlova. Stay tuned for that!
