My heart is broken. Every day I wake up I wonder why I’ve been geographically placed here instead of back home. Or somewhere closer to home. My whole life’s work revolves around trying to get back to a place and time period that I’ve never even lived in but miss like it’s a family member who has been away for ages or who passed on. West Asia (“the Middle East”) is the most magical region on this planet. I don’t care if that sounds biased. It is pure magic. Pure joy. Pure love. Pure beauty. Pure culture that has been preserved for thousands of years. We are the beginnings of “civilization.” That’s why these greedy fucks want every piece of it. I have to believe that there is another universe where our part of the world is untouched and our land gets to breathe and our people get to live and be free. جربوا وصفة أمي للزعتر بنكهة رائعة، طريقة سهله و أصلية 🇵🇸.⁣ My Moms Authentic Zaatar, cannot be missed!⁣ ⁣ ⁣ Ingredients⁣ 2 cups Dried/Sifter Oregana (Which is almost 6 cups Dried Zaatar Leaves (Oregano))⁣ 1/3 cup Toasted Sesame Seeds⁣ ¼ cup Sumac⁣ ¼ tbsp Citric Acid⁣ 3 tbsp Olive Oil⁣ 1/3 tsp Salt⁣ ⁣ Preparation⁣ - Wash your fresh Zaatar Leaves (Oregano) dry them from the water and pick the leaves off the twigs. Dry them in a dark area from 5-7 days or more, till completely dried out⁣ - If using ready dried Zaatar, proceed to the next step⁣ - Measure & place your dried Zaatar in a sieve over a large bowl. Using your hands, rub the Zaatar in a circular motion and sift the Zaatar. Keep rubbing until all the pure Zaatar passes through the sieve and into the bowl leaving any twigs behind, discard twigs that remain in the sieve⁣ - Gradually add Olive Oil onto the Zaatar and rub until all the Zaatar is coated with Olive Oil⁣ - Add Toasted Sesame Seeds, Sumac, Citric Acid & Salt and give it a rub until everything is incorporated⁣ - Store in an air tight container – room temperature⁣ - Serve with Warm Pita Bread & Olive Oil and use in many recipes⁣ ⁣ المكونات⁣ ٢ كوب زعتر أخضر منشف و مطحون صافي (تقريبآ ٦ كوب أوراق زعتر ناشفة)⁣ ٣ م ك زيت زيتون⁣ ٣/١ كوب سمسم محمص⁣ ٤/١ كوب سماق⁣ ٤/١ م ك ملح الليمون⁣ ٣/١ م ص ملح⁣
