Mango season is here! First up is pickled mango! I got these beautiful green mangoes from my mom and they were absolutely huge and perfect! I love mango so much! I’m so excited to share with you guys more mango recipes so stay tuned! • Green mango Pickling sauce: • 1 cup rice vinegar • 1 cup water • 2 cups sugar • 2 Tbsp Hawaiian salt or sea salt • 2 Tbsp li hing mui powder • 10-15 sweet li hing mui seed @linshawaiiansnacks Cut the green mango into strips and put them into a clean jar or air tight container. To make the sauce for pickling, combine vinegar, water, sugar, and Hawaiian salt into a sauce pan. Heat on low and mix till the sugar has dissolved. Add li hing mui powder. Give it a mix. Then add li hing mui seeds. Turn the heat off and let it sit till completely cooled. Fill the jar with the sauce, along with the seeds. Cover tightly and pickle in the fridge for at least 1 full week. That’s it! It’s so hard to wait the whole week when these jars are staring at me every time I open the refrigerator..
