Rich, tender mutton in a flavorful embrace— @barkat_impex ‘s Nihari Masala makes it unforgettable..🤌 Ingredients 🛒 Mutton 1/2 kg Chopped onion 1 cup Garlic 5-6 nos Ginger 1 pc Nihari masala 2 tbsp Kashmiri chili powder 2 tsp Wheat flour 2 tbsp Water 1/4 cup Directions 👩‍🍳 ; -In a pan add, 1/4 cup oil and chopped onion. -Fry onion until golden brown. -Then make a paste by blending garlic, ginger and a little water. -Add mutton to the same onion fried oil, sauté on medium heat for 5-6 mins. -Stir in the onion ginger garlic paste and saute for a minute. -Add nihari masala, kashmiri chili powder , Stir and cook for a minute. -Pour 5 to 6 cups water and give a good stir. Bring to a gentle boil. -Cover and simmer on a low heat, until the meat is tender and fully cooked(you can also use a pressure cooker) -Reserve oil which will be floating on the top of the Nihari while cooking. -Meanwhile, make a lump free wheat slurry . -Slowly add it to the nihari , mix well. -Bring it to a boil. Adjust salt. -Garnish with ginger strips , green chili coriander leaves and reserved oil. Mutton Nihari- old delhi style mutton nalli nihari ✨ Nihari although seems intimidating to cook but is one such dish that is very easy to make, requires very less effort if using the packaged masala & tastes super divine. I would highly recommend using packaged nihari masala specifically for this dish as it gives it that complex depth of flavours from the spices which is otherwise quite difficult to achieve & also makes the cooking process much easier! By no means i'm saying that this recipe is authentic or is the traditional way to make or the taste would beat the ones those that are slow cooked & traditionally made with freshly ground masalas! Its just an easy way to make nihari to satisfy the craving without the hassle. For the nihari- 🔸1kg bone-in mutton 🔸1/2 cup oil 🔸2 tbsp ginger garlic paste 🔸3-4 tbsp nihari masala powder (any brand) 🔸1 tsp Kashmiri red chilli powder 🔸Salt- to taste (skip if your packaged masala already has salt) 🔸2-3 medium onion sliced & fried 🔸3-4 tbsp atta (wheat flour) dissolved in 3/4 cup water For the garnishing- 🔸Ginger julienne 🔸Chopped coriander & green chillies Heat oil & add in thinly sliced onion, fry till light golden brown & add in the meat. Sauté till color changes & add in ginger garlic paste, mix & add in the nihari masala along with kashmiri red chilli powder & salt, sauté everything. Crush & add fried onion, mix everything & add in enough water. Cover & cook/ pressure cook till the meat is tender & fall off the bone. Once the meat is tender, separate the oil from the top for later use, once the oil is seperated, let the gravy simmer slowly while adding the flour slurry, let it thicken & adjust consistency accordingly. Cover & let it cook for another 7-10mins, then pour the separated oil on top, garnish with ginger julienne, chopped coriander leaves & green chillies.
