ROSH RECIPE | Ingredients * 2 kg meat * 4–5 whole potatoes (don’t cut them) * 3 tomatoes * 3 onions * 1 whole garlic * 8 green chilies * 1 lemon * half cup oil (if you have fat ok your meat don’t use oil then) Spices * 1 tbsp black pepper (lightly crushed, not finely ground) * 1 tbsp red chili flakes (not chili powder) * 1 tbsp salt * 1tbsp DRIED CORIANDER * 1 tbsp cumin seeds * 1 tbsp oregano or any refreshing herb of your choice Method 1. If your meat has a fat layer, place that side down first while cooking for extra flavor. If not, no worries the recipe still works perfectly. 2. Add the meat to the pot along with tomatoes, onions, garlic, green chilies, lemon, and all the spices. 3. Add the whole potatoes directly into the rosjno need to cut them. 4. Cover and cook on low flame (“dum”) for about 2 hours. 5. After 1 hour, check the potatoes. Remove them once they are cooked (usually around 40–45 minutes after the first hour) so they don’t get too soft or mashed into the roast. 6.
