That’s right. Save this video first. Share it if you really love me My American Buttercream tastes nothing like traditional abc. I get compliments each and every week about how great it taste. How light and fluffy it is. How they don’t usually like buttercream but can’t get enough of mine 🤭🤭 Ok so here’s the recipe It’s pretty simple 4 sticks softened unsalted butter 4 cups of sifted powder sugar Flavor to taste. 1-2tsp extract for those who need a measurement That’s it. Literally. And please don’t ask me if I use milk. Do you see it listed above? Ok cool. I prefer using quality butter and by softened I mean a bit softer than room temp. Not melted but not any firmness to it at all. I scoop loose cups meaning I don’t mash in the powder sugar. I place my butter in the mixer first. Paddle attachment. And allow it to cream. It should lighten in color Then I add in the powdering one cup at a time and allow to keep blending. Then I add my flavor once all the sugar is blended. I mix on low. Sometimes I let the high hit real quick just to knock the extra sugar loose. But yeah. Low. The whole process only takes around 6-7 minutes. It’s like boiling water. Don’t watch it. lol. Since I started making buttercream, I was always told to use the paddle attachment to remove air bubbles from the buttercream. I used to do that but never achieved the silkiness that I was looking for because there is more to know about this!!! After 3 years of experience now I can give you some golden tips: 1- You can use the whisk attachment on low speed on your stand mixer to achieve a silky buttercream! It does NOT have to be the paddle attachment. 2- You'll never be able to get rid of the air bubbles if your buttercream is firm! You want the buttercream to be very soft in order to achieve best results. Therefore, if your buttercream is firm, melt a few tablespoons of buttercream in the microwave and add it back into the bowl! 3- The mixer must run for at least 15 minutes on low speed. Don't worry if your buttercream is very soft at this point, you have removed most of the annoying air bubbles that would act as a nightmare while smoothing your cakes! Your buttercream will firm up again in a few hours or if you're decorating your cake straight away it will firm in the fridge. The best trick I’ve learned for a bubble free, super soft SMBC is…. 🥁 THE FREAKING PADDLE ATTACHMENT! 🤭 Once I add my butter to the swiss meringue I let it cream until combined but then I change to my paddle attachment and beat at low for about 10min or until it is completely silky. The friction helps take the mix to a very soft consistency while the paddle beats all the air out.

It’s as simple as that 🤩 yes, I know using paddle attachment + mix on low for couple of minutes is great and would be quicker. But to avoid over mixing aaand to get that silky smooth frosting: Simply push the frosting back and forth and spread it along the sides of the bowl for a couple minutes. The cupcake trouble shooting reels were so popular (thank you all so much 🥺) so now I’m back with a buttercream series! ⬇️ 1) Too SWEET- The worst thing ever in my opinion is when you have sickly-sweet buttercream and to fix this we can either add a pinch of SALT to balance the flavours or add LESS icing sugar! 2) Tastes just like icing SUGAR and FAT- Honestly trust me we do not want this as it’s just gross! Instead try to add a flavouring such a VANILLA. 3) Too many AIR BUBBLES- It’s so annoying when your in the middle of icing and a random air bubble appears out of nowhere 🙈 To avoid this use a PADDLE attachment instead of the whisk as whisks can incorporate too much air. Or at the end, mix on low speed for a few minutes to get rid of bubbles. Hope you have all found something useful in here and comment if you would like more buttercream reels!
