One way is not better than the other (maybe 😉😜) ❤️🍐 And yes, I know western pears are best eaten with the skin, but Korean pears? I have never had one with the skin on. The skin is quite tough and not a very nice texture, but what’s underneath it is so sweet and juicy mmmmmm 🤤. Traditionally, and even nowadays, I have only had Korean pear peeled and cut, no other way. I enjoy peeling Korean pears; it’s easier than peeling an apple. Korean pear is also used a lot for health supplement teas and in cooking (marinating meat in grated pear or fresh pear juice to soften the texture). Will it Tarte Tatin? - ep. 5: PEAR 🍐🍐🍐 FULL RECIPE BELOW ⬇️ NOTE: this is for a 9" cast iron skillet - measurements for a bigger/smaller pan will need to be scaled accordingly INGREDIENTS: 4 large Bosc pears 1 large sheet frozen puff pastry (thawed) 1/2 cup granulated sugar 2 tbsp red wine vinegar 1/3 cup red wine 3 tbsp cold unsalted butter 1 stick cinnamon Vanilla ice cream (optional) INSTRUCTIONS: 1. Pre-heat your oven to 400 degrees Fahrenheit. 2. Peel your pears, and cut each pear lengthwise into 6 equal segments, removing the stem and core. Place your peeled pear segments in a large container or bowl, and submerge them with hot water from your tap. (Tap water at its hottest setting, is typically between 50-60 degrees Celsius, which is what we’re aiming for - if not, adjust the temperature as needed!). Let your apples sit in the water for at least 10 minutes, or until we are done the next step. 3. While your pears are soaking, make your caramel! Using a 9" round cast-iron pan (you can also use another pot/pan to make your caramel, then transfer it to a 9" round baking dish after). Cover the bottom of your pan with an even layer of your granulated sugar, then drizzle your vinegar to cover the edges of the sugar. Turn your stove top to medium heat, and allow the sugar to come to a boil, before reducing into a caramel. What you are looking for with your caramel, is for a light brown colour to appear. Once you see this (likely just in one section of your pan, VERY CAREFULLY tilt your pan in a circular motion to make sure the sugar caramelizes evenly - but DO NOT stir or whisk your caramel at any point, or else it will crystallize. FLIP THE PAN EP.1: Pear Tarte Tatin 🍐 Recipe 👇 🍐 Peel, core, and halve 3 pears. 🧈 In a 20 cm (8-inch) ovenproof pan, melt 70 g butter. Add 55 g granulated sugar, 1 tbsp lemon juice, 1 tbs cognac (optional). Cook over medium heat for a few minutes, stirring, until the mixture bubbles and turns amber. Add 1 tsp of crushed cardamom, scrape a vanilla pod and add the vanilla and the pod to the caramel. 🍐 Arrange the pears carefully in the caramel, then reduce the heat to low-medium. Let them cook for about 5 minutes, watching closely so the caramel doesn’t burn. 🍐 Remove the pan from the heat and let it cool briefly. When it’s warm rather than hot, cover the pears with a sheet of puff pastry and prick a few small holes to release steam. 🥧 Bake at 200°C (400°F) until the pastry is puffed and golden. Remove from the oven and let rest for about 30 minutes. ⏳ While the tarte rests, prepare the whipped sour cream. Whip 200 ml (¾ cup plus 1 tbsp) sour cream together with 2 tbs of powdered vanilla sugar until airy. Grate lemon zest, add to the sour cream and taste and adjust. 🍽️ Now Flip the Pan. Eat My Pear! I was feeling feisty out in the field with our Pear tree. People are often struggling with fruit these days. It seems to go like this: Sugar is bad. Fruit is sugar. Fruit is bad. In this era of protein maxxing, ketone loving, swole longevity seeking, I say eat pears. Berries. Watermelon. Mango. Goodness I lived at the foot of a mango tree in 1991 and WOW. I’ve been vibing slightly under ripe strawberries and apples (hit me with that almond butter). I delight in the brainfoodiest of fruits, the avocado. 🧠💚🥑 I wrote about the origins of this pear tree in my World Food Day post. Please share with your friends who like fruit.
