🍍 Pineapple Tepeche🍹🍹 DETAILED RECIPE Ingredients: • Peels + core of 1 ripe pineapple (washed well) • 4 cups water (enough to submerge) • ¼ cup jaggery or brown sugar (adjust to taste) • 1 cinnamon stick • 2–3 cloves • (Optional) small piece of ginger Method: 1. Wash the pineapple thoroughly and peel it. Use the peels and core (not the flesh). 2. Add pineapple scraps to a clean glass jar. 3. Add jaggery, cinnamon, cloves (and ginger if using). 4. Pour in water until everything is fully submerged. 5. Cover the jar with a cloth or loose lid (not airtight). 6. Keep it at room temperature, away from direct sunlight. 7. Let it ferment for 24–48 hours. • You’ll see bubbles and smell a light tang — that’s good. 8. Strain the liquid. 9. Chill and enjoy! INGREDIENTS: peel of 1 pineapple, well washed pulp of 1 passion fruit star anise to taste optional: cinnamon stick to taste ½ cup brown sugar 2 liters (2 qt) water HOW TO: Wash the pineapple very well using a scrubber. Remove the crown and the core, then peel it. Place the peel in a large jar. Add the passion fruit pulp, star anise, and cinnamon stick if desired. Add the brown sugar and the two liters of room-temperature water. Stir well. Cover the jar with a paper towel or napkin and secure it with a rubber band. Let the mixture ferment at room temperature for at least twenty-four hours. Do not refrigerate during this first stage. After the fermentation period, stir again. Strain the liquid to remove the peels and any solids. Transfer the drink to bottles — it yields about four to five bottles. Refrigerate. To drink immediately, simply pour over ice and enjoy this natural, refreshing drink. The flavor is slightly reminiscent of kombucha. Keep it refrigerated and consume whenever you like. Tip 1: If kept outside the fridge, it can lose freshness and over-ferment, changing its texture and taste. Tepache is a traditional fermented drink made from pineapple peels. With the help of sugar (which feeds natural yeast and bacteria), it ferments into a lightly fizzy drink that supports digestion, gut balance and overall microbiome health. I rinsed my peels, ginger, cinnamon & cloves with baking soda first to remove dirt and pesticide residue. Fermentation is slow wellness. Intentional wellness. The kind that starts in your kitchen. PS- The 2nd fermentation could vary from 12-24hours depending on the fuzziness you want.
