I recently made Pozole Rojo de Puerco (pork) and so many of you asked for a chicken version so here it is 😋 This Pozole de Pollo is cozy, flavorful, and surprisingly easy to make. Pozole Rojo 3 lbs paleta de cerdo 1 1/2 lbs huesos de cuello de cerdo 18 tzas agua 1 cebolla 1 cabeza de ajo 2 hojas de laurel Para el chile rojo: 10 chiles guajillo 2 chiles anchos 2 dientes de ajo 1 cda consomé de pollo 1 cda orégano seco Caldo de la carne, (el necesario) Sal Maíz precocido enlatado. Instrucciones: * En agua hirviendo colocamos las carnes , la cebolla, el ajo, las hojas de laurel y un poco de sal. * Dejamos que suelte las impurezas y las retiramos. * Cubrimos y a fuego medio bajo dejamos cocinar por 1 hr. * Poco antes de que la carne esté lista, agregamos los chiles al caldo para que se cosan (10 min aprox). * Pasamos los chiles a la licuadora y agregamos los dientes de ajo, el consomé de pollo, el orégano y un poco de sal si es necesario. * Licuamos y vaciamos sobre el caldo junto con el maíz precocido. * Ajustamos el sabor, cubrimos y dejamos cocinar por 30 min más. Red Pozole 3 lbs pork shoulder 1 1/2 lbs pork neck bones 18 cups water 1 onion 1 head of garlic 2 bay leaves For the red chile: 10 guajillo chiles 2 ancho chiles 2 garlic cloves 1 tbsp chicken broth 1 tbsp dried oregano Meat broth (as needed) Salt Precooked hominy Instructions: * Place the meat, onion, garlic, bay leaves, and a pinch of salt in boiling water. * Let it release any impurities and remove them. * Cover and cook over medium-low heat for 1 hour. * Shortly before the meat is ready, add the chiles to the broth to cook (approximately 10 minutes). * Transfer the chiles to the blender and add the garlic cloves, chicken broth, oregano, and a pinch of salt if needed. * Blend and pour over the broth along with the hominy. * Adjust the seasoning, cover, and let cook for another 30 minutes. #pozole #recetamexicana #mexicanfood
