🍗 The easiest roast chicken every family should know how to make. A whole chicken is always my go-to starter recipe when you want to cook more at home. It’s affordable, forgiving, and turns into endless leftovers for salads, sandwiches, and rice bowls all week long. Here’s my foolproof 3-step roast chicken method 👇 STEP 1: Season + Rest Season a whole chicken generously with salt, pepper, garlic powder, and a little smoked paprika or your favorite seasoning blend. Let it rest on the counter for 30 minutes while the oven preheats to 415°. Place a cast iron pan in the oven to heat. Note: I use @lodgecastiron STEP 2: Roast (the secret step) Carefully remove the ripping hot pan from the oven and place the chicken directly into it. This jump-starts the dark meat so everything cooks evenly. Roast for about 1 hour, until fully cooked. STEP 3: Rest + Schmaltzy Toast Let the chicken rest in the pan for about 30 minutes before carving so it stays juicy. Slice a baguette, butter it, and dunk it straight into that schmaltz in the pan. Do not skip this. Serve with roasted veggies and something pickled like onions or cauliflower for a balanced, cozy dinner that feels special but is incredibly simple. FOOLPROOF ROAST CHICKEN 🐥 I don’t pretend to be a great cook. But I do know how to make a perfect roast chicken- every single time. I get asked for this recipe often, so here it is: ✨ Sunny’s No-Fail Roast Chicken ✨ • 🔑 Preheat oven to 425°F (218°C) on Convection Roast if you can. If not, Roast works fine. • Bring chicken to room temp (about 1 hour). • Remove innards. Pat dry. No washing. 🔑 Cooking time: 18 minutes per pound + 15 additional minutes ➡️ Convection roast? Roast for 75% of total time (my preference). • Salt + pepper cavity, add halved lemon • Brush chicken with melted butter or EVOO • Generously salt & pepper • Sprinkle rosemary (fresh or dried) + a few sprigs inside cavity if you have fresh • Roast in foil-lined pan (light spray so it won’t stick) 🔑 DO NOT TOUCH IT. Classic Roast Chicken recipe below 🍗 This recipe is Hashimoto’s friendly, & friendly for everyone else too 🫶 You’ll need: - Chicken (I buy a whole chicken, insides removed) - Potatoes - Carrots - Onion (any color) - Ghee (I recommend avocado oil or beef tallow if you’re strict DF) - Whole garlic (optional) Seasoning: - Salt - Pepper - Garlic powder - Smoked paprika - Dried parsley Instructions: Chop your potatoes & veggies! I coat my potatoes with ghee, then season with salt, garlic powder & smoked paprika. Do this 2-3x until they’re fully coated. Let’s prep the chicken - I coat mine with ghee, then season with more salt, pepper & garlic powder. Next, spread your potatoes, carrots & onions on a pan lined with parchment paper (optional, but highly recommend as it helps with cleanup!) I typically season my carrots & onions separately beforehand, but it doesn’t really matter - you can’t mess up this recipe! I seasoned with more salt & garlic powder once they were on the pan. I used an air fryer oven ♨️ I pre-heated to 375F (190C) using “roast” setting. I cooked it for ~1 hour + 15 minutes, & used a thermometer to check the internal temperature in the thickest part of the thigh was 165F (~74C). I also rotated halfway through to ensure even cooking. If you’re using a regular oven 🔥 Pre-heat to 400F (205C) on regular “bake” or “roast” setting & cook for about 1 hour 15 - 30 minutes. Rest the chicken 10–15 minutes before carving to ensure it’s nice & juicy & that’s it!! To make the compound butter, place the butter into a small bowl and add the lemon zest, orange zest and garlic. The chicken is ready when the thickest part registers 75ºC on a meat thermometer, and there is no pink meat and the juices run clear.
