Ramps 101! Starting with what they are, and how to responsibly use and store them. While these are incredibly delicious and fun to cook with, they are endangered in some areas. If you can find them, buy ramps that are sourced responsibly, or if you’re lucky, sourced locally from a neighbor. This helps protect their population (it takes a long time for their growth cycle to begin!) and makes sure we can have them for a long time. Ramps are incredibly concentrated with flavor, so it’s easy to only buy what you need. 4-6 ounces per recipe is plenty 💚 LET THE SEASON BEGIN! #ramps

RAMP SCHMEAR!!! Tis the season to go hard with ramps! Scallion cream cheese could NEVERRRR. Don’t @ me about the toasted bagel, summer is coming so I’ve switched to toasted flagels only for the time being!! 🫠 Ramp Schmear 1 bunch ramps (about 4 ounces), leaves and stems separated, stems thinly sliced 1 tablespoon white wine vinegar Pinch granulated sugar Kosher salt and pepper 8 ounces cream cheese, at room temperature In a small bowl, stir the ramps with the vinegar, sugar, and a heavy pinch each of salt and pepper. Let sit for 15 minutes. Meanwhile, bring a medium saucepan of salted water to a boil and prepare an ice bath. Blanch the leaves for 1 minute, then using tongs or a slotted spoon, transfer to the ice bath to chill. Squeeze the leaves to remove excess water, then roughly chop. In a mini food processor, combine the stem mixture, chopped leaves, and cream cheese and process until well incorporated. Taste and adjust the seasoning with salt and pepper, then serve. #ramps #creamcheese #bagel
