As a mother trying to feed the whole family, I can appreciate how hard it is to please everyone. I try to adapt the recipes so we can all enjoy the same meal while reaching our nutritional goals. Today, I prepared everyone's favourite, stuffed peppers, but this time with a little twist. I added konjak rice as a low carb option, and I am very pleased to say that the younger generations approved! 😁 For the recipe: - depending on your baking dish, around 10 peppers (preferably in different colours if you can find organic ones) - 3 tbsp extra virgin olive oil (plus 2 tbsp at the end) - 700gr grass-fed beef mince and 300gr of good quality pork mince - 200gr pancetta - 2 red onions - 2 large carrots - 2 courgettes - a pack of konjak rice - organic tomato sauce Follow the process in the video. This is another example of batch cooking. You can freeze or keep in the fridge for up to 4 days.
