Reverse Sear Steak (Medium-Rare) 🥩🔥 Start with a thick cut ribeye or New York strip (1¼–1½ inch). Season generously with salt & pepper. Oven at 275° until internal temp hits 110-115°. Screaming hot cast iron → render the fat cap first. Sear until golden brown, flip, lower heat to medium, then add rosemary, thyme, garlic & butter. Baste. Pull 5-10° before target temp (130-135°) and let it rest. Perfect medium-rare every time.

HOW TO REVERSE SEAR A BONE-IN RIBEYE 1.2 kg bone-in ribeye steak 50g salted butter 2 cloves garlic, smashed and peeled. For the Herb Salt Cure: 12g salt 4g thyme leaves 4g rosemary leaves, chopped 4g sage leaves, chopped 4g black peppercorns Directions: Add salt, thyme leaves, chopped rosemary, sage and black pepper corns to a mortar and grind into a fine green sand with the pestle. Alternatively, this can be done in a small spice grinder as well. Liberally coat the steak with the Herb Salt Mixture and place on wire rack on a rimmed baking sheet. Place in the fridge to absorb the salt for 4-24 hours. Preheat oven to 100-110C or 200-225F. Insert a probe thermometer into the center of the ribeye, making sure to not get too close to the bone. Pull the steaks out of the oven when they are about 5-8 degrees away from your desired temperature and allow them to rest while you preheat a skillet. The steaks will carry over cook anywhere from 5-8 degrees. I pull mine at 118°F and by the final sear, internal temp should be around 125°F Render the fat cap for about 1 minute then sear on each side for 2 mins each. Add 50 grams of salted butter and two cloves of garlic. Baste for an additional 45 per side and pull from the pan. Slice, sprinkle with flakey salt and enjoy! REVERSE SEAR STEAK + [RECIPE] I like reverse searing because while the steak sits in the oven, you can do other things. Prep other dishes, do laundry, just go about your day. Reverse sear instructions: Oven: 200°F (convection if you have it) Time: about 45–75 minutes, depending on thickness Pull temp (before sear): Rare → 110–115°F Medium rare → 118–120°F (sweet spot) Medium → 125–128°F Rest: 5 minutes Sear: 30–45 seconds per side in a ripping hot pan Guide: 1-inch steak → ~45 min 1.5-inch → ~60 min 2-inch → ~75 min Use a thermometer. That’s what takes the guesswork out. *** Soy–dijon dipping sauce: 2 tbsp 25% less sodium tamari from @sanjtamari 1½ tbsp rice vinegar 2 tbsp very finely minced shallot 1 tsp Dijon mustard 1–1½ tbsp toasted sesame seeds Method: 1) Mix shallot + rice vinegar, let sit a few minutes to mellow. 2) Add tamari + Dijon, stir to combine. 3) Finish with toasted sesame seeds.

Perfect results every time when you reverse sear steak (and use a remote thermometer)

Reverse Sear VS Forward Sear When it comes to cooking steak theres a lot of ways to get it done and there really is no wrong answer. Well unless you’re using your dishwasher to sous vide, we’d avoid that one. There’s the classic two-zone cook over charcoal or the nuanced broil sear cook of steakhouses like Peter Lugers but there’s ultimately two basic techniques that often get people picking sides. The modern reverse sear and the trusted forward sear. Each uses the same instruments to cook: a burner, a pan, and an oven. However its the timing and order that makes these styles end up with completely different results. Check out the video to find out why!

How to Cook a Steak 🥩 I get asked this a ton and this is my go to method. Especially for expensive and thick cut steaks like this tomahawk ribeye, the reverse sear method is the answer. My biggest tip would be use the reverse sear method and get a meat thermometer. As for getting a great crust, dry brining helps a ton, I like to do it for at least 2 hours in my fridge. #steak #tomahawksteak #ribeye #reversesear

Sous vide vs Revers sear? 🥩 Whats your favourite way to cook a steak? #cooking #beef #food

Reverse Sear Ribeye Steak 🥩 + Recipe Below👇 METHOD ⬇️ WHAT YOU NEED: - Steak of choice at least 1 in thick ( I used a Grass Fed Ribeye) - Seasoning of choice - Butcher twine if steak isn’t holding together well - Wired Rack w/ Baking Sheet - Pan that can handle high heat well (I use Carbon Steel or Cast Iron) - Oil/Fat of choice to sear steak in (one that can handle a high temperature such as Ghee, Avocado Oil, Tallow, etc. anything that has a high smoke point) DIRECTIONS 1. Pull steak out & let set till ~room temperature before starting. I usually go with 30 minutes before. 2. Pat steak dry with cloth or paper towel. 3. Season generously on all sides, could use a binder if you want such as olive oil. But I found that the seasoning sticks well without it. Pat seasoning into the meat. 4. Place on wired rack & into the oven at 225-275 (lower the temp longer it will take, if I’m busy I’ll go lower to give myself more time) 5. Let cook until it reaches an internal temp of ~5-7 degrees below of desired internal temperature. I like medium rare which is around 130 degrees so I pulled it out of the oven around 120 as you can see. 6. Next get a pan going on high heat. Preferably cast iron or stainless steel or carbon steel. Let it warm up for a few minutes then add in your oil/fat. 7. Once smoking hot, sear the steak for ~90 seconds or so/side to build the crust. 8. Place bake on wired rack & let rest for ~10 minutes. This allows the meat to relax & juices to redistribute inside. 9. Slice & ENJOY! 🙌🏻 👩🏻🍳: @calwillcookit #lowcarbrecipes #ketorecipes #beefitswhatsfordinner #ketodiet #lowcarbdiet #fitover40 #carnivorediet #lowcarblife #carnivorerecipes #carnivore #easyketorecipes #easymealprep #carnivorewomen #carnivorerecipe #ketowomen #lchfdiet #easyketorecipes #steak #steakvideos #cooking #steaks #beef #bbq #barbecue #ribeye #grill #recipe #grilling #meat #steakrecipe

It’s been almost 20 years since I first wrote about the reverse sear for @cooksillustrated magazine, and it’s still my favorite way to cook a big steak. You can find the updated recipe and videos on my free Patreon and YouTube channels. Links in my bio.

✍🏼 How to slice steak against the grain 👇🏻 1. Find the grain. The fibers of the beef run one way, creating strips that sit parallel to each other. 2. Slice against or perpendicular to those lines (grains) to get a perfect, tender bite of steak.
