REVERSE SEAR STEAK + [RECIPE] I like reverse searing because while the steak sits in the oven, you can do other things. Prep other dishes, do laundry, just go about your day. Reverse sear instructions: Oven: 200°F (convection if you have it) Time: about 45–75 minutes, depending on thickness Pull temp (before sear): Rare → 110–115°F Medium rare → 118–120°F (sweet spot) Medium → 125–128°F Rest: 5 minutes Sear: 30–45 seconds per side in a ripping hot pan Guide: 1-inch steak → ~45 min 1.5-inch → ~60 min 2-inch → ~75 min Use a thermometer. That’s what takes the guesswork out. *** Soy–dijon dipping sauce: 2 tbsp 25% less sodium tamari from @sanjtamari 1½ tbsp rice vinegar 2 tbsp very finely minced shallot 1 tsp Dijon mustard 1–1½ tbsp toasted sesame seeds Method: 1) Mix shallot + rice vinegar, let sit a few minutes to mellow. 2) Add tamari + Dijon, stir to combine. 3) Finish with toasted sesame seeds.

HOW TO REVERSE SEAR A BONE-IN RIBEYE 1.2 kg bone-in ribeye steak 50g salted butter 2 cloves garlic, smashed and peeled. For the Herb Salt Cure: 12g salt 4g thyme leaves 4g rosemary leaves, chopped 4g sage leaves, chopped 4g black peppercorns Directions: Add salt, thyme leaves, chopped rosemary, sage and black pepper corns to a mortar and grind into a fine green sand with the pestle. Alternatively, this can be done in a small spice grinder as well. Liberally coat the steak with the Herb Salt Mixture and place on wire rack on a rimmed baking sheet. Place in the fridge to absorb the salt for 4-24 hours. Preheat oven to 100-110C or 200-225F. Insert a probe thermometer into the center of the ribeye, making sure to not get too close to the bone. Pull the steaks out of the oven when they are about 5-8 degrees away from your desired temperature and allow them to rest while you preheat a skillet. The steaks will carry over cook anywhere from 5-8 degrees. I pull mine at 118°F and by the final sear, internal temp should be around 125°F Render the fat cap for about 1 minute then sear on each side for 2 mins each. Add 50 grams of salted butter and two cloves of garlic. Baste for an additional 45 per side and pull from the pan. Slice, sprinkle with flakey salt and enjoy! Reverse Sear VS Forward Sear When it comes to cooking steak theres a lot of ways to get it done and there really is no wrong answer. Well unless you’re using your dishwasher to sous vide, we’d avoid that one. There’s the classic two-zone cook over charcoal or the nuanced broil sear cook of steakhouses like Peter Lugers but there’s ultimately two basic techniques that often get people picking sides. The modern reverse sear and the trusted forward sear. Each uses the same instruments to cook: a burner, a pan, and an oven. However its the timing and order that makes these styles end up with completely different results. Check out the video to find out why!

It allows you to get a great sear and then bring up the temp of the meat slowly. Almost like Sous vide but without the precise temp control . ——————————————————————————————————————- Started out with this thick tomahawk ribeye and salted it heavily on both sides. We then set it on a rack for about 1hr to let it get to room temp. We cranked up our @webergrills kettle up as high as we could get it with a full chimney of charcoal. Before we added the steak to the grill we gave both sides a generous coating of coarse black pepper. We seared both sides of the tomahawk for about 2 minutes. After, we moved the steak over to the indirect side of the grill and put in our wireless temp monitor. Put the lid on and close all the vents to bring that temp down to about 250. Continued cooking the steak indirect till the internal read 115. Pulled the steak and let it rest for 10 min. Medium rare perfection. . . How to Reverse Sear a New York Strip Steak! Prepare the Weber Slate: -While the steaks are smoking, preheat your Weber Slate to high heat. Sear the Steaks: -Once the steaks reach the desired internal temperature, remove them from the smoker. -Place the steaks on the hot Weber Slate. -Add butter, smashed garlic cloves, and fresh thyme sprigs to the slate. -Sear the steaks for 2-3 minutes on each side, or until they are dark golden brown and have a nice crust. -While searing, continuously spoon the melted butter, garlic, and thyme mixture over the steaks to baste them and infuse additional flavor. Reverse seared these using my very own Rocky Mtn Beef Rub! @phelpsbarbecue I also seasoned these steaks with @girlscangrill Brisket Rub to give it some extra flavor and it was a superb combo! Used my @ninjakitchen Flexflame to smoke at 225 degrees until internal temp of steaks reached close to 115 degrees. Measured those temps with my @thermoworks RFX wireless thermometers. Cool thing about this Flexflame is that I can control the exact temp to sear at, which was 600 degrees. Having those cast iron grates helps give it some nice grill marks, too.
