The London Fog tea latte was actually invented in our own city, Vancouver, BC! It combines earl grey tea with vanilla and steamed milk for a delicate sweet drink. For our basque cheesecake, cream is infused with earl grey tea and vanilla bean paste is added to the batter. The key to basque cheesecake is heavy cream added to the batter combined with a high baking temperature, which yields an ultra creamy texture and deeply caramelized edges. -Tart hamuruna dair detaylar- ( bardak ölçüsü 250 ml) -1/3 bardak toz şeker -200 gr tereyağı(soğuk olmalı) -1 yumurta -1 paket vanilin -2,5 su bardağı un -1 cimdik tuz Mutfak robotunda şeker,vanilin,tuz, un karıştırın. Küp küp doğradığınız tereyağını azar azar ekleyin tekrar karıştırın. Kum kıvamına geldiğinde yumurta ekleyin, hamur kendini toparlayacak kadar durdurup çalıştırarak 1-2 dk karıştırın. (Bu aşamaya kadar tüm işlemleri rondo ile yapın, el ısısı ile hamuru yumuşatmamak için) Hamuru robottan çıkarıp elinizle hafif toplayın ve yağlı kağıt üzerine alın, biraz açarak daire şekli verin ve üzerine yağlı kağıdın yanda kalan kısımlarını sararak kapatın.(hamur açılırken kolaylık olması için bu şekilde soğutuyoruz)Buzdolabında bir saat bekletin. Dolaptan çıkarınca fırını alt-üst 180’ açın ısınsın. Buzdolabından çıktıktan sonra hamur çok katıysa 5 dk bekleyin sonrasında tereyağını eritmeden hızlıca hareket edin. Hamuru yağlı kağıdın üzerinde yarım cm kadar kalınlıkta açın. Yapışmaması için üzerine yağlı kağıt kapatabilirsiniz veya hafif unlayabilirsiniz.Hamurun açılmış halinin çapı, kullandığınız tart kalıbının tabanının çapından 10 cm daha fazla olmalı. Ben tabanı 20 cm’lik bir tart kalıbı kullandım. Hamuru merdane yardımıyla sararak tart kalıbına aktarabilirsiniz. İç kısmı parmaklarınızla hafifçe bastırarak kalıba oturtun ve kenarlardan bir merdane yardımıyla geçerek fazlalık parçaları ayırın. Kenarlardan çıkan parçalarla mini tartlar veya kurabiyeler hazırlayabilirsiniz. Tart hamurunu 3 ay kadar buzlukta saklayabilirsiniz. Hamura kabarmaması için çatalla birkaç yerden delikler açın. 10 dakika daha buzdolabında dinlendirin, kendini salmış olan hamur toparlansın. Sonra üzerine yağlı kağıt yerleştirin ve bir kase kuru bakliyatı hamura ağırlık olması için dökün. Kullandığınız bakliyatı soğuduktan sonra paketleyip birkaç sene bu amaçla kullanabilirsiniz. Isınmış olan fırında 25 dk pişirin sonra üzerindeki ağırlığı alarak 10 dk daha pişirin. Recipe: Ingredients 200 g cream cheese (softened) 60 g Greek yogurt or hung curd 130 g fresh cream 80 g dark chocolate (melted) 2 tbsp unsweetened cocoa powder 2 tsp cornflour or cornstarch 60 g castor sugar 1. Preheat your oven to 200°C. Line a 6-inch round tin with parchment paper, leaving a generous overhang for that rustic finish. 2. In a bowl, whisk the cream cheese until smooth. Add yogurt, cream, and sugar. Whisk well until fully combined. 3. Stir in the melted (and slightly cooled) dark chocolate. 4. Sift in the cocoa powder and cornflour.
