Preheat oven to 200°c and line a baking tray. Chop up the potatoes and add to the baking tray. Drizzle on olive oil and season with salt. Mix and bake for 40 minutes of until golden and crispy. 2. While the potatoes are cooking, add all ingredients for the dressing into a large salad bowl and mix. 3. Once potatoes are cooked, let cool slightly then add them to the bowl. 4. My go-to salad (about 30g protein per portion) 💚recipe below or on carolefood.com ⬇️ Ingredients 1 400g can chickpeas, drained and rinsed (about 240g drained weight) 3 large carrots, cut into 1 inch batons Spices: 1 tsp smoked paprika, 1 tsp ground garlic, 1 tsp cumin 60g spinach, chopped (or romaine lettuce, or your favourite salad!) 160g giant couscous, cooked weight 10g coriander, chopped 5g dill, chopped 60g feta, crumbled 4 tbsp pistachios, roughly chopped Oil, salt Dressing 100g greek yoghurt 1 crushed garlic clove (optional) 2 tbsp tahini 3 tbsp apple cider vinegar 2-4 tbsp water 1 tbsp harissa Pinch salt Pickled red onion 1 red onion, finely sliced 100ml white wine vinegar/apple cider vinegar Method 2. Preheat your oven to 220c/200c fan. Place the carrots and chickpeas on a large shallow baking tray then add a good pinch of salt and the spices. Drizzle with 1-2 tbsp of oil. Mix it all together really well with your hands. Place in the oven for 20 minutes, or until golden. 3. Meanwhile, cook the giant couscous according to packet instructions. 4. Mix together the ingredients for the pickled red onion. 5. In a small bowl or jar, mix together the ingredients for the salad dressing with a pinch of salt. Add enough water to make the dressing similar in thickness to pouring cream. 6. In a large salad serving bowl, add the spinach then top with the rest of the salad ingredients. Top with as much pickled red onion as you fancy (the rest will keep in the fridge for about 5 days). Then drizzle over the dressing then mix it all together. And that’s it! #recipe #salad

Feel free to remove or add any veggies as per your preference You’ll need * Lettuce * cucumber * red cabbage * carrot, grated * Cherry tomatoes or normal tomatoes * onion For the Dressing you’ll need; *3 tbsp fresh lemon juice *3 tbsp vinegar ( I used white but you can use apple cider, white wine vinegar etc) * 1 tsp salt (adjust to taste) * 1 tsp mixed herbs/italian seasoning * black pepper * 1 tbsp honey * 6 tbsp olive oil Method: * In a small bowl, whisk together the vinegar, lemon juice, salt, mixed herbs, black pepper, honey, and olive oil until smooth. * In a large salad bowl combine all your chopped veggies till each is evenly distributed . * Pour the vinaigrette over and toss until everything is well coated. * Chill for 5- 10minutes to let flavors marry then serve fresh.

INGREDIENTS: For the salad: 1/2 green cabbage, thinly shredded 3-4oz arugula 1/2 English cucumber, thinly sliced 3-4 scallions, sliced Handful of cilantro, chopped Handful of fresh mint, chopped Sesame seeds & peanuts (optional for crunch) For the sesame ginger dressing: 1 to 1.5 inch chunk fresh ginger 3 garlic cloves 4-5 tbsp mayo 5 tbsp rice vinegar 1 tbsp sesame oil 1 tbsp soy sauce or tamari Salt & pepper Here’s how I made it: 1️⃣ Thinly shred the cabbage and add it to a large bowl along with the arugula, cucumber, scallions, cilantro, mint, sesame seeds, and chopped peanuts.
