🥕MEDITERRANEAN ROASTED CARROTS If you love carrots, and my last few mediterranean roasted carrots recipes, you will love this one! Its served up over a whipped herby yogurt spread that takes it to the top! This has a mix of crunchy ,creamy, sweet, and tangy in each bite, and its the perfect healthy salad, appetizer, or make it a meal by adding some protein like chicken, shrimp, or a white fish. Ingredients 2lbs carrots 2tbsp olive oil 1 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp oregano, 1 tsp Aleppo pepper or chili flakes Salt & pepper to taste Herby Yogurt Tahini Base 1 cup thick greek yogurt 1/4 to 1/3 cup tahini Zest and juice of a small lemon 1 garlic clove Small handful fresh dill (about 2 tbsp) Small handful fresh parsley (about 2 tbsp) 1 tbsp olive oil Toppings: 3 tbsp crushed walnuts or pecans 2 tbsp finely chopped fresh herbs (I love adding a mix of dill, mint and parsley 1-2 tbsp honey drizzles 1oz feta crumbled Aleppo pepper or chili flakes Here is how I made it: 1.Preheat your oven to 450°F. 2.Peel 2lbs small carrots and cut any thick ones in half lengthwise so the carrots all roast evenly, this is key! 3.Toss the carrots with the olive oil, salt, spices. Spread them evenly across a baking sheet. Roast for 18-20 mins until the edges are nice, blistered, and softened up. 4.For the base, whip the greek yogurt, garlic, fresh herbs, and olive oil until smooth with the juice and zest of a small lemon. Give it a taste and adjust with more salt or lemon if you like, and if you like tahini, feel free to drizzle in some more! 5.Spread your whipped yogurt on a plate, add the warm carrots on top, then top with some crushed walnuts (or pine nuts or pecans), some more fresh finely chopped herbs, some feta cheese crumbled, chili flakes, and a little drizzle or two of honey if you like. 🥒 Chinese Cucumber Salad 🥒 This is a classic childhood dish that I grew up eating and it’s by far one of the tastiest ever despite it being so simple! Also... the longer you let it sit in the dressing, the better it tastes 🤭 Ingredients 2 large or 3 medium cucumbers Approx. 1-2 tsp sea salt 1.5 tbsp black vinegar 1 tbsp soy sauce 1 tsp sesame oil 2 tsp sugar or sweetener of choice 2 cloves garlic, minced Chilli oil, to taste 1. Wash your cucumbers then slice off the ends. Smash down using a knife to split it lengthways then slice into rough chunks. 2. Place into a bowl and sprinkle some salt over to draw out any excess moisture. Mix well and set aside for 5-10 mins. 3. Rinse the cucumber to get rid of any excess salt then drain well (taste to test it). 4. In the meantime, combine the vinegar, soy sauce, sesame oil, sugar, garlic and chilli oil. Toss well to coat. 5. Serve immediately or alternately, cover and place in the fridge to sit and marinade before serving. When ready, transfer onto a plate, spoon on the leftover dressing and garnish with extra chilli oil. Japanese style sesame spinach in 5 minutes 🥬follow me @littlericenoodle for more vegan Asian recipes it has been getting pretty warm lately and I didn’t feel like cooking so much yesterday, but I was craving something refreshing and tasty, so I made this. The seasoning is very easy but so rich, the whole preparation takes less than 5 minutes. If you have spinach at home, don’t hesitate to make this recipe😋 fresh spinach 400g white sesame seeds 4 tbsp sesame oil 1 tbsp soy sauce 2 tbsp mirin 2 tbsp sugar 1 tsp 1.Blanch the spinach for 1 minute in boiling water, then soak in cold or icy water. Then take the spinach out and squeeze the water out. 2.in a non-stick pan, heat the pan over medium-low heat, mix for 2-3 minutes until they are slightly toasted on the outside. Transfer the sesame in a food bag, use a rolling pin to smash half of the sesame seeds. Transfer them into a bowl. 3.Add soy sauce, sesame oil, mirin and sugar in the bowl, pour the seasoning over the spinach and mix everything well together, enjoy😋 #spinach #vegetable #sesame #veganrecipes #salads

🥕 SKINCARE + IMMUNITY CARROT SALAD If you love easy healthy salads that taste incredible, you’ve got to give this a try. It’s not only light, healthy, and refreshing, but works wonders for your skin, immunity, and delivers tons of antioxidants. The secret is to salt the carrots a touch to make them soft but still crunchy. And, this is not only crunchy, but bright, a little spicy, and one of the best easy salads I’ve made. Add cooked chicken or shrimp for a boost of protein to make this a high protein easy lunch. Salad ingredients: 1lb carrots, ribonned 2 Persian cucumbers or half an english cucumber, thinly sliced 4 green onions (scallions), thinly sliced Large handful of finely chopped fresh cilantro Juice of 1/2 lemon Salt & pepperto taste Dressing (Chili Sesame Oil): 5tbsp toasted sesame oil 1/2tbsp honey (or sugar free honey) 4 minced garlic cloves 1 tbsp freshly grated ginger 2 tbsp toasted sesame seeds 1/2 to 1 tsp chili flakes Here is how I made it: 1️⃣ start with 1 lb carrots. Peel them, ribbon them, and add to a bowl with a couple generous pinches of salt & let sit for 10-15 mins to soften up. 2️⃣ Thinly slice 2 Persian cucumbers ( or 1/2 English cucumber) into half moon, 3-4 green onions, and finely dice a large handful Fresh cilantro. Add to your salad bowl. 3️⃣ Squeeze the juice of half a large lemon. 4️⃣ In a heat-safe bowl, add 1/2 tbsp honey, 4 minced garlic cloves, 1 tbsp grated ginger, 1.5 tbsp toasted sesame seeds, and 1/2 tsp chili flakes. 5️⃣ Warm 5 tbsp toasted sesame oil over low-medium heat, then carefully pour it over the chili mixture. Let it bloom and cool for 10 minutes. 6️⃣ Toss everything really well with a fork (or your hands!), taste & adjust with salt, more lemon, or whatever else you like,. I can’t stop making this smashed Asian cucumber salad! It’s cooling, crunchy, and tossed in the most delicious sesame-garlic dressing, with a little kick from the chili crisp. I’ve also added extra green onion and chopped cilantro for a bright, herby twist. It’s the perfect chilled vegetable side dish for any Asian-inspired dinner. But I could honestly just eat a whole bowl of this to myself with a side of rice. It’s that good! Save this for your next dinner rotation. 🥬✨ • For the almonds: ½ cup almonds 1-2 tsp olive oil 1 tbsp honey ¼ tsp salt 1 tbsp Italian seasoning For the chickpeas and dates: 1 15-oz can chickpeas, rinsed and drained ⅔ cup chopped dates ½ cup chopped fresh parsley ½ cup finely chopped red onion 1 tbsp lemon zest Juice from one lemon ½ tsp salt ¼ tsp pepper 6 tbsp olive oil For the salad: 1 large head kale, finely chopped (5-6 cups) Olive oil Salt 4 cups finely chopped mini cucumber 1 cup ricotta cheese • 1️⃣Preheat the oven to 400. Line a sheet pan with parchment paper and set aside. 2️⃣Add the almonds to the sheet pan, then drizzle with the olive oil and honey and season with the salt and Italian seasoning. 3️⃣Toss and place in the oven for about 5 minutes. Remove and allow them to cool, then chop them up and set aside.4️⃣Make the relish. Add the chickpeas, dates, parsley, lemon zest, lemon juice, salt, pepper and olive oil to a small bowl and mix to combine. Set aside.5️⃣Add the kale to a large bowl, then drizzle with a little olive oil and a couple pinches of salt. Use your hands to massage the kale with the oil. 6️⃣Assemble the salad.
