Unlike regular noodles, these are made with thin vermicelli rice noodles, which have a light, stringy texture that’s just amazing. Singaporean Rice Recipe ⤵️ Chicken 300 g boneless chicken strips 1 tbsp ginger garlic paste 1 tbsp soy sauce 1 tbsp vinegar 1 tbsp chilli sauce 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp chilli flakes 2 tbsp ketchup 2 tbsp ginger julienne 2 tbsp oil - Mix all the ingredients together and marinade for 1 hour (except oil & ginger) - In a wok heat the oil and fry the ginger - Now add in the chicken and cook on high flame for 7 to 9 minutes till it is cooked - Add 2 tbsp ketchup if you want saucy chicken (optional) Sauce 4 tbsp mayonnaise 1 tbsp cream 2 tbsp ketchup 2 tbsp chilli garlic sauce 1 tbsp vinegar 1 tbsp soy sauce 1/2 tsp sugar 1/2 tsp chilli flakes Rice 1.5 cups basmati rice 1.5 tsp cumin seeds 1 tbsp salt 1 tbsp sesame oil - Boil the rice with the cumin seeds, salt and oil till well done. My Home Cafe | Episode 7: Mei Fun/ Singapore Noodle Stir Fry Ingredients: -200 gms rice vermicelli noodles -2 eggs -3 sausages -6-8 prawns -2 tbsp chopped garlic -1 sliced onion -1 tbsp chilli flakes -1 tsp turmeric -1 tsp cumin pepper -1 tsp coriander powder -1 tsp fennel powder -1 tsp black pepper -1 tsp salt -Chopped babycorn -Red and yellow bellpepper sliced -Julienne carrots -Diced mushrooms -2 tbsp soy sauce -2 tbsp oyster sauce -1 tbsp chilli oil -Green onions Method: -Begin by soaking the rice noodles with room temperature water till it loosens. -Scramble eggs, fry sausages and prawns and keep aside. -Heat oil and drop garlic, onion and chilli flakes. -Once aromatic add the spices mentioned above and saute for a few minutes. -Add all the veggies and cook till they soften a bit but also has a crunch. -Add back the fried protein along with the soaked noodles and season with soy sauce and oyster sauce. -Chop the noodles with a scissor for easier handling. -Stir on medium heat and let the noodles cook completely. -Finish with spring onions and chilli oil. . . #foodreels #easyrecipes #meifun #singaporenoodles #noodlerecipe

Making fresh rice noodles at home is so tedious but once you get the hang of it, it’s so worth it! ➡️ Recipe: Fresh Rice Noodles Serves 2 * 1 cup rice flour (glutinous rice flour won’t work) * 1/2 cup tapioca starch * 1 3/4 cup water * 1/4 tsp salt * 1/3 cup oil, use neutral oil like avocado oil (for brushing) Tools— * Spatula * Large pan or pot * Steamer rack * Whisk * Brush * Metal steel pan or glass container (my measured around 5 1/2 x 7 1/2 inch) * Cutting board to flat surface to lay noodles 1. In a large bowl, combine rice flour, tapioca starch/flour, water, and salt. Whisk until everything is dissolved, leave whisk in bowl. For best results let the batter sit for 30 minutes before steaming. 2. Brush a thin layer of oil on the bottom of your container or sheet pan. Mix the batter with the whisk because the flour settles, then pour in about 1/4 cup of batter (if using the same size container as I did). The batter should fill 1/8 - 1/10 inch in thickness. Ensure the batter is covering the bottom evenly. 3. In a large pan of boiling water, set the steamer rack about an inch above the water. Then place the batter filled container onto the rack. Cover with a lid and steam for 4-6 mins if using glass container or 2-3 mins for thin sheet pan). You’ll know when it’s ready when the sheet of noodle is slightly transparent and firm. 4. Remove container from the steamer. Then brush another thin layer of oil on the rice noodle sheet. Let it cool for 2 to 3 minutes. Then using a spatula gently peel the whole sheet and place on your cutting board on the opposite side of the oiled side. 5. Brush more oil on the opposite side. Then repeat steps 2-4 until there is no batter left. Stack all of the noodles together to form one piece of layered sheets. 6. Bring noodles to room temperature, then cut into desired thickness. Singapore style noodles 🍜 Ingredients - 300g vermicelli rice noodles, soaked in boiling water for 5 mins - 3 spring onions, sliced into 2cm pieces - 1 carrot, cut into matchsticks - 1/4 head wombok, sliced thin - 4 cloves garlic, finely diced - 300g cold roast pork (chicken or ham) - 8 raw prawns (or shrimp), deveined and sliced in half - 2 eggs, beaten - 1 tsp curry powder - 2 tbsp soy sauce - 3 tbsp peanut oil Method Note - if you don’t have a hot burner, remove the ingredients from the wok after each step and let it get back up to temp before moving on to the next step. Once you get to the step with the noodles, you can add everything back in and toss. 1. Heat the peanut oil in a wok or large frying pan over high heat. 2. Add the garlic and stir fry for 15 seconds. 3. Add the beaten egg and stir fry for another 30 seconds. 4. Add the sliced prawns and pork, and stir fry for another minute. 5. Add the spring onion, carrot, and wombok and stir fry for 2-3 minutes until the vegetables are slightly softened. 6. Add the drained noodles, curry powder and soy sauce, and stir fry until the noodles are heated through and coated in curry powder. 7. Serve hot and enjoy! #noodles #cooking #recipe #dinner
