We love lasagne at home and I decided to change the usual lasagne I make for a chicken, spinach and mushroom version. I’ve sautéed chicken mince with garlic and onions then added the baby spinach and mushrooms towards the end with a basic tomato based sauce. When layering there’s some crumbled ricotta for added creaminess. As for the béchamel, I’ve used a combo of oat milk and cream as we’re slowly grading up our son with dairy (he’s growing out of dairy allergy managed by an immunologist) hence the slightly darker tinge of the sauce. Threw in some grated cheese blend to the béchamel too for more flavour and stretch. This was great - the kids demolished their plates and hubby didn’t mind the fact that there were veges in the lasagne 😝 Give it a go!
