Noa’s just left for swimming with her Dad and I’m on the sofa… completely drained 😂 6:45am start, six solid hours of cramming in as much fun, dancing, colouring, activities, snacks and silliness as we could possibly fit into a Sunday. Right now my nervous system feels like I’ve been chased by a bear. You know that full-on, given your absolute everything to entertain while hearing ‘MAMA’ 500 times in 5 hours and ‘CAN YOU HELP ME’ while you’re also attempting to make breakfast, load the dishwasher, feed the dogs, clean up the dogs wee on the carpet, do a laundry load - kind of tired that only motherhood gives you. But she had the best morning. And when I’m with her, that’s what matters most to me. Her happiness. I want to enjoy our time together and actually be in it with her. And as much as I do, if I’m honest, it can also be tiring and frustrating at times. Then we’re suddenly rushing because we’re late or feeling like you’re losing your patience because of the constant push backs on things but I also heard someone say the other day ‘Learn to be happy. Otherwise, you’ll run out of time…’ 💔 It really stuck with me. Since I heard that, I’m trying more to be happy even if I don’t feel like I am in that very moment. And by doing something silly like a dance to Gina G together, it actually does make us both feel better. They’re only little for such a short time. And I want her to remember a mum who laughed, danced and soaked up every moment together. (Even if that mum is now nearly falling asleep on the sofa 🫠) #motherhood #dancing #sundays

The Victorious Sponge Recipe You asked and I know I’ve been awol so this is my answer. Sent with love. The recipe for yummiest Victoria Sponge. * 5 free-range eggs * 300g caster sugar, * 300g organic self-raising flour * 1 tsp baking powder * 300g melted butter A big pot of double cream. A quarter of a pot of strawberry jam A punnet of organic (if possible) strawberries 🍓 A spoonful of icing sugar It’s SUPER easy. Put the eggs, sugar, flour, baking powder and butter into a big mixing bowl. Mix. Not with a whisk like Pippin, a wooden spoon will be more helpful and hopefully not as messy! Line two cake tins with baking parchment. Cut out the bottom and sides and stick to tin with olive oil. A sous🧑🏼‍🍳 job. Put half of the mixture into each tin. Bake for 25 mins but check after 20 - you want it a little bit wobbly - not raw - but not over cooked. Take out and set to cool. While waiting start to slowly whisk the double cream - when you get soft peaks - stop - you don’t want butter. 🧈 Have your sous chefs chop up the strawberries 🍓 Put the jam on the bottom cake - then the cream - then strawberries. Time for the top cake and then a sprinkle of icing sugar. Serve with tea - I let sous chefs 🧑🏼‍🍳 🐴 have a slice as their reward and then sent them outside - and enjoyed in total, absolute, silence.
