GOOD MORNING MY PINEAPPLE ~UPSIDE DOWN CAKE~ this turned out so much better than i expected, i LOVE HER. the olive oil adds that little floral, peppery hint which is so good with the sweet pineapple and rum😩 try it and let me know what you think. oh & SHARE WITH YOUR PINEAPPLE🤭🤭 RECIPE: For the Pan: 6 pineapple rings (fresh or canned) maraschino cherries 3-5 tbs brown sugar optional: spiced rum! For the Batter: 150g (1¼ cups) all-purpose flour ½ tsp baking powder ½ tsp baking soda 150g (¾ cup) granulated sugar 100g (about ½ cup) full-fat Greek yogurt 100g (just under ½ cup) olive oil 2 large eggs (100g total) 1 tsp vanilla extract Spray a 10 inch cake pan (preferably spring form) & line with parchment. Layer pineapples, maraschino cherries, rum, and brown sugar. Set aside. Mix wet ingredients and whisk well. Add in dry ingredients and fold till just combined. Pour batter evenly over pineapples. Bake at 325F for 30-40 minutes. You may have to cover the cake with foil halfway to stop the top from over browning!
