~ URID DAL~ 🇩🇪REZEPT👇🏽zum abspeichern 📌 •••••••••••••••••••••••••••••••••••••••••••••••••••• Zutaten: 1 große Zwiebel, 1 TL Kreuzkümmel, 1 TL Salz, 1 TL Chilli Pulver, 1 TL Kurkuma, 1 TL Korianderpulver, 1 TL Knoblauch Ingwerpaste, 2 mittelgroße Tomaten, 300 g Urid Dahl (geschält), frischer Koriander. [Das Dal gründlich waschen und in Wasser für 2-3 Stunden einweichen oder über Nacht.] 1. Zwiebel und Kreuzkümmel glasig anbraten.(ca. 2 Minuten) 2. Gewürze dazugeben und für ca. 3 Min. auf mittlerer Hitze anrösten. 3. Tomaten dazugeben kurz Scharf anbraten. Circa 1 min, falls es austrocknet etwas Wasser dazugeben, bis die Tomaten und Gewürze schön miteinander ein Massala bilden (eventuell mit geschlossenem Deckel arbeiten niedrige Hitze). 4. Linsen dazugeben, scharf anbraten und mit Wasser ablöschen. 5. Deckel drauf und für ca. 30 Minuten auf niedrige Hitze die Linsen Garen lassen 6. Maash dal (Urid dal) recipe! Wash and Soak 2 cups maash dal for at least 1 h. Dice 2 onions and sauté in a pan. Add 1 tsp chopped garlic, 1 tsp chopped ginger and cook for a few minutes. Add 2 tomatoes. Add 1 1/2 tsp salt, 1 tsp red chilli powder, 3/4 tsp turmeric, 1 tsp coriander powder, 1 tsp cumin powder and mix. Add a few spoonfuls water and cook till oil starts to separate. Add the soaked dal and mix. Add 2 cups water and cover and cook for 20. - 25 minutes. Cook till the dal is cooked but not mushy. Add green chillies on top and ginger. I didn’t have ginger left. Black / Urid dal and homemade naan. Urid dal is one of my favourite lentils for so many reasons. It’s full of goodness, from protein, vitamin B, iron and overall really good nutrition. Best made with lots of ‘warm’ spices; especially peppery ones such as garam masala and whole pepper corns , all simmered in a rich tomatoey masala which gives it a tanginess that I love. Naan bread is easier than you think, whether you choose to use yeast to make it rise or not, these are a no fuss, stove top charred version that taste just brilliant. Beautiful ensemble, which again, is so easy from scratch and cost effective. You can batch cook this for two days, it actually tastes better on day two, as the spices infuse the dal so well overnight. Recipe for dal below and naan coming up in the story and highlights. Happy new week everyone xx . . #dal #naan #lentils #meatlessmonday #healthyrecipes #indianfood #recipeoftheday Ingredients: 3 cups black lentils (urid daal) 2 medium onions diced 4 tomatoes finely diced 2 tsp tomato purée 2 tbsp fresh ginger grated and sliced to garnish 6-7 cloves of garlic crushed Spices: 1 tsp turmeric 1 tsp ground coriander 1 tsp cumin seeds 1 tsp medium hot chilli powder/ Kashmiri red chilli powder or 1/4 tsp hot chilli powder 1 tsp garam masala 1 cinnamon stick 1 tsp black pepper corns 1 tsp tamarind paste (optional) Salt to taste Oil / ghee to stir fry (I use a generous few tablespoons of ghee ) More ghee to garnish Fresh coriander to garnish Method Soak the lentils in a bowl overnight. Place a generous glug of oil into a medium sized sauce pan on high heat. Add onions, cumin seeds, (make sure they’re covered in oil) and cinnamon stick and stir fry until onions are translucent. Add the chopped tomatoes and purée and fry for another minute. Add all spices and salt and fry for a further 5-6 mins until a thick paste is formed. ಸುರ್ನೊಳಿ-Surnoli Detailed Recipe: Ingredients: Dosa rice - 2 cups Fenugreek seeds - 1tsp Urid dal - 1 fistful Thick poha - 1 fistful Puffed Paddy - 2 fistful Grated jaggery - 2 cups ( adjust according to your sweetness) Grated coconut - 2 tbsp Turmeric powder - 1/2 tsp —> Soak rice, dal, poha and methi in a vessel for at least 3 hours. —> Soad puffed paddy in a seperate bowl for 30mins. —> In a wet grinder, add grated jaggery, rice, urid dal, fenugreek seeds and poha and grind without adding any water. —> Once all the ingredients are half ground, add grated coconut and puff paddy and ground until batter is smooth. —> At last add turmeric powder to the batter. —> Transfer the batter to the vessel and close the lid. —> Next day adjust the consistency and start making dosas.
