For the past few years, I’ve committed to eating more veggie and proteins dinners, skipping out on potatoes, rice, and pasta during the week. Since veggies take up majority of my plate, I like to make them with extra love and flavor so I’m not missing the side dishes I choose to not include. Friendly side note: I know that carbs are not bad but this is a dinner routine that works really well for me. Since making multiple diet changes in 2023, I am nearly 30 pounds lighter and happy with my food choices! 💕 Mixed Veggies Ingredients: 1 broccoli crown (steamed) 1 small red bell pepper 1/2 yellow onion 1/2 zucchini 3 chopped garlic cloves Avocado oil for sauteeing Butter (optional) 1/2 squeezed lemon Seasoned with salt, pepper, garlic powder, paprika #veggies #dinneridea #mixedveggies #vegetables

Sautéed vegetables 🥦 Recipe 👇 INGREDIENTS: 1 red bell pepper 1 yellow bell pepper 4 baby corns 4-6 button mushrooms 1 carrot 1 small broccoli 3 garlic coves 2 tbsp cooking oil 1/2 tsp salt (or as needed) 1 tsp dried oregano 1/2 tsp red chilli flakes 2 tbsp butter (if using salted, add salt after adding butter) 1 tsp lemon juice PROCESS: 1. Slice all vegetables into similar sizes 2. Heat a wide pan/skillet on medium high flame 3. Infuse 3 crushed garlic cloves into 2 tbsp oil. Adding chopped garlic might end up in burnt garlic. This way we can add garlic flavour to the vegetables without burning the garlic 4. Once the oil is fragrant, add the mushrooms and sauté until browned 5. Next add the broccoli and sauté for 2 minutes. If you like soft broccoli, add parboiled broccoli instead of raw 6. Next add in carrots and sauté for 2 minutes 7. Next add in bell peppers and baby corn. Sauté for 1 minute. By now the vegetables will be tender yet crunchy 8. Add salt as needed, 1/2 tsp dried oregano, 1/2 tsp red chilli flakes and sauté for 1 minute 9. Switch off the flame, add 2 tbsp butter, 1 tsp lemon juice and mix well 10. 🥕 Roasted Vegetables with Garlic & Herbs (Quick Recipe) ⏱️ Time: 25–30 minutes 🍽️ Serves: 3–4 🧾 Ingredients 3 cups mixed vegetables (carrots, potatoes, bell peppers, zucchini, broccoli, onions) 3 tbsp olive oil 3–4 garlic cloves, minced 1 tsp dried rosemary or thyme (or mixed herbs) ½ tsp paprika (optional) Salt & black pepper to taste Optional: chili flakes or lemon juice 👩🍳 Instructions Preheat oven to 200°C (400°F). Chop vegetables into even-sized pieces. In a bowl, toss veggies with olive oil, garlic, herbs, salt, pepper, and paprika. Spread evenly on a baking tray (don’t overcrowd). Preheat oven to 200 °C (400 °F). 2. Toss carrots, potatoes & zucchini with 2 tbsp olive oil, oregano, thyme, salt & pepper. 3. Roast on a sheet 25–30 min, turning halfway, until golden & tender. 4.
