Natural, Honey, and Washed coffee processing explained in 10 seconds. It’s all about the drying - well, what’s left on the seed during drying. If the skin (called cascara) is in tact, that’s a naturally process coffee. If some sticky fruit (called mucilage) is left on, it’s a honey - there are different levels like black, red, yellow, white. If the mucilage is removed (most often using water), it’ll be a washed coffee. Processing plays a major role in the flavor profile of the cup. Naturals are said to be big and fruity, washed coffees are clean and delicate, and honeys are sweet and balanced. However processing is getting more and more nuanced these days, making it harder to tell a clean natural from an extended fermentation washed. Did you know that both can be “washed,” but have completely different profiles? In coffee, washed doesn’t always mean the same thing. A coffee can undergo a traditional washed process (short, open fermentation) or a long, controlled fermentation and still be classified as “washed.” The key? Fermentation. • In traditional washed coffee, the goal is cleanliness, bright acidity, and clarity in the cup. • In fermented washed coffee, the fermentation is prolonged or carried out under special conditions (anaerobic, culturing, etc.), generating more complex profiles: ripe fruit, juicy body, unusual notes. ✨ Washed Process Coffee ✨ This video was taken during harvest at Finca Vista Hermosa 🌱 It all begins with the harvest. Pickers carefully select only the ripest red cherries—quality starts right there. Next, the cherries are floated in a syphon. This step separates any beans that don't have the right density, ensuring only the best ones move on to be pulped. The pulping machines have to be set just right: too wide, and good beans are lost with the husk; too narrow, and the beans get damaged. From there, the coffee rests in fermentation tanks for about 36 hours.
