Washed, honey, and natural coffee process explained in under 20 seconds

☕ Washed Process: precision, clarity, and controlled fermentation. In the washed method, ripe coffee cherries are pulped to remove the outer fruit layer, leaving the seeds coated in mucilage — a sugary, gelatinous layer essential for fermentation. The parchment coffee is then placed in fermentation tanks where enzymatic and microbial activity breaks down the mucilage under carefully monitored conditions. Once the mucilage detaches, the coffee is fully washed with clean water, ensuring that the seed surface is completely free of residual sugars. This results in a more uniform and predictable drying phase, allowing the intrinsic characteristics of the variety and terroir to shine without the influence of extended fruit contact. The cup profile typically presents bright, clean acidity, lighter body, defined sweetness, and floral or citrus-driven notes — a hallmark of high-quality washed coffees.

Washed vs. Natural — what’s the difference, and why does it matter? Washed (or wet-processed) coffees are fermented in water to remove the fruit before drying. This lets the true character of the bean shine—think clean acidity, medium body, and clarity in flavor. It’s consistent, refined, and super reliable if you like tasting the origin in your cup. Natural coffees, on the other hand, dry with the whole fruit still on the bean. That means the coffee absorbs all the sugars and fruitiness, giving you big, bold flavors—often very sweet, very fruity, and sometimes unpredictable. Natural, Honey, and Washed coffee processing explained in 10 seconds. It’s all about the drying - well, what’s left on the seed during drying. If the skin (called cascara) is in tact, that’s a naturally process coffee. If some sticky fruit (called mucilage) is left on, it’s a honey - there are different levels like black, red, yellow, white. If the mucilage is removed (most often using water), it’ll be a washed coffee. Processing plays a major role in the flavor profile of the cup. Naturals are said to be big and fruity, washed coffees are clean and delicate, and honeys are sweet and balanced. However processing is getting more and more nuanced these days, making it harder to tell a clean natural from an extended fermentation washed.
