Rolled with the 3-2-1 method on this spare rib cook. If you are not familiar with this method…its 3 hours smoke, 2 hours in a wrap and 1 hour sauced after the wrap. Not my favorite recipe as the ribs can be too tender for my liking. But i needed tender rib meat on this cook cause i removed the bones, chopped the meat and used it for another cook. Many mentioned a swine apple in my rib/pineapple cook, so in another video this rib meat will play out in one of those.
