Banoffee cookies 🍪 Ingredients: * 1 cup browned butter * 1 cup brown sugar * 1/2 cup white sugar * 2 large ripe bananas, mashed * 2 eggs * 1 tsp vanilla extract * 3 cups all-purpose flour * 1 tsp baking soda * 1/2 tsp salt * 1 cup chocolate chips * caramel or toffee filling (caramel recipe on my previous video). Instructions: * Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. * In a bowl, mashed the banana. Add browned butter, sugar and brown sugar until smooth. * Add the eggs, and vanilla extract to the butter mixture. Mix until well combined. * Mix together the flour, baking soda and salt. Mix until just combined. * Fold in the chocolate chips into the cookie dough. * Chill the dough for 15-20 minutes to let it set before scooping. * Scoop the dough and make a dent to fill the toffee or caramel sauce. * Place onto the prepared baking sheet. * Chill for atleast 30 minutes or overnight before baking. * Bake the cookies in the preheated oven for about 12-15 minutes or until the edges are golden brown. 1 Cookie Banoffee Massa: 15g manteiga em ponto pomada 7,5g açúcar refinado 7,5g açúcar mascavo 6ml leite ou água Mini pitada de extrato de baunilha (se quiser, eu não coloquei) 24g farinha de trigo Pitadinha de fermento químico Pitadinha de sal Recheio: +/-27g doce de leite (congelado!!!) +/-3 rodelas de banana (quantidade a gosto porém mais que isso ficará difícil de rechear) Assar no forno pré aquecido a 180ºc por +/- 12/15 minutos ou até as beiradas estarem leeeeeevemente douradinhas. Cobertura: +/-27g creme de leite fresco (gordura 35%+), nata, ou cream cheese (eu usei cream cheese porque é o que eu tinha no dia e também amo essa combinação) 5g açúcar de confeiteiro (quantidade a gosto) -Para fazer essa cobertura é só bater muito bem esses 2 ingredientes, com um fue, até chegar no ponto de chantilly. OBS: -O COOKIE PRECISA ESTAR FRIO QUANDO COLOCAR A COBERTURA! Caso esteja quente a cobertura irá escorrer. -Pode deixar esfriar em temperatura ambiente caso não queira comer gelado da geladeira. -Se quiser comer quentinho sem a cobertura pode também. Se quiser comer quentinho com a cobertura pode também, quem sou eu para julgá-los. -Eu recomendo deixar o doce de leite porcionado e congelado por DIAS no congelador antes de fazer esse cookie, facilitará na hora de rechear, vai por mim. Banoffee Cookie Buns 🍪 Recipe (you can halve if needed): Whip/beat together 200gm butter, 1 1/2 cups sugar, 2 ripe bananas, 2 eggs Fold in 4 cups flour and 1 tsp vanilla paste or essence Leave dough to chill for at least 1 hr Fill with thick caramel dependent on the size of cookie you choose to make Bake on 180 degrees, bottom rack for 20min or until golden. NOTE: ovens will vary, cookie size will vary, placement will vary. Please just keep an eye on them and pull out when golden. If your oven has hot spots, you may need to rotate the tray. I don’t know your oven im sorry lol Once cooled top with cream cheese icing and melted caramel. Cream cheese icing is equal parts cream cheese and icing sugar plus a squeeze of lemon. Adjust the icing sugar to your liking. Start with half a cup and add more to your taste.

Chewy, gooey, a little bit crunchy, and not too sweet…honestly, these might be my favourite cookies ever. Must. Make. Immediately. 🍌 For 12 large cookies: 250g unsalted butter, softened 200g light brown sugar 100g caster sugar 2 medium eggs 1 tbsp vanilla extract 370g plain flour 1 tsp bicarbonate of soda ½ tsp salt 5 finger of fudges finely chopped or choc chip cookies and soft fudge 200g mascarpone 3 ripe bananas, 2 mashed, 1 sliced 3 tbsp icing sugar 1 tsp vanilla bean paste Another 1–2 tsp caster sugar per cookie for the brûlée topping 1. Preheat oven to 180°C (fan) and line baking trays with parchment. 2. Cream the butter and sugars until pale and fluffy. Beat in eggs and vanilla extract the fold in the flour, bicarb of soda, and salt followed by the fudgy pieces. 3. Pop in the fridge for an hour, then scoop into 12 large cookie balls, spacing well on trays and flattening slightly. You might need to do batches (I did 3 to be safe) 4. Bake for 10–12 mins, until golden at the edges and just soft in the middle. Let cool completely before popping a slice of banana on each cookie. 5. For the topping, mix mascarpone, 2 mashed bananas, icing sugar, vanilla, and salt until smooth. Chill for 15 mins then either pipe onto the cookies or dollop on and make a little well for the sugar. 6. Sprinkle with a thin, even layer of caster sugar and brûlée with a blowtorch until golden and crackly. Don’t leave for too long or the cream will melt!
