Shaping builds surface tension, which supports oven spring and helps your bread rise UP instead of spreading OUT. Here are a few more tips for getting that beautiful lift in the oven: - Give your dough enough strength early on. Stretch & folds or coil folds during bulk fermentation are key. - Make sure your oven is hot and fully preheated before your loaf goes in. (Steam helps too!) And when it comes to shaping: 🥖 Proper fermentation makes shaping 10x easier. Don’t rush it. 🥖 Don’t skip the pre-shape. It makes your final shape more effective. 🥖 Use rice flour to dust your bannetons so the dough doesn’t stick and tear when you flip it out. Bonus tip: Struggling with super sticky dough? This dough was like shaping a cloud. So beautifully proofy and aerated. I applied some pressure on the rollup to slightly de-gas some of the big bubbles. This final shaping technique is essentially the Tartine fold with stitching and a rollup. This dough went into the fridge for a 16-hour cold retard. We’ll see how it bakes up. Shaping a sourdough loaf takes more than anything else, practice. watching others doing it helps you learn, but, like my husband (who has tried couple of times himself and saw me doing it way too many times by now) says it’s like learning any other new skill. It looks easier than it is when you actually get to do it. Feeling clumsy with your first many loaves is normal. First of all, decide on the shape. And choose your proofing basket and dutch oven (if you use one) accordingly. I prefer an oval loaf to a round one, easier to slice, but truth be told, it also opens nicer when you bake it than a round one Use a scraper, that’s one item I couldn’t do it without. Especially when you deal with a sticky dough Dust the working surface and your hands with flour. And also the banneton Use a gluten free flour (rice or buckwheat are the ones I tend to use). These do not form gluten bonds with the dough, which helps creating that layer which will avoid the dough sticking to the banneton Don’t be afraid to touch the dough. Plan the movements and be quick when you do it. Otherwise it will just stick more and more Best to not have dough on your hands or on the scraper, as this will only make the dough stick even more If you pre-shape (usually in a round shape), make sure the dough has relaxed enough before you handle it again for the final shape. If the dough is tense and doesn’t relax, all you do is to force it into the final shaping, risking tearing it. Also, you tighten too much which will lead into a denser/tighter crumb. Next time you use the same recipe, skip the preshaping Pre shaping is optional and it’s an opportunity to give additional tension to the dough, and bring a messy dough into a smooth uniform ball, which will facilitate the final shaping. Very useful when you make a large piece of dough that requires splitting For the banneton, use a liner if you have one. Even if the dough sticks to it, it’s easier to take it out, than from the rattan basket. Also easier to clean! A few tips… 💡Use super fine Thai rice flour for dusting 💡Use a new blade on your lane and cut it as I did in the video 💡Make tiny but deep cuts close together 💡Bake 5 min then cut the expansion score 💡To avoid the dusting flour from coming off while baking, eliminate steam. If using Dutch oven, don’t cover, if open baking, don’t add water or ice for steam. Most importantly, your bulk fermentation has to be on point.
