BROOKIS CHOC CHIP COOKIES - Thermomix Method 👇🏼 This recipe follows Brookie Bakehouses Chocolate Chip Cookie recipe, and is by far our favourite biscuit recipe. I have convereted the method to Thermomix and popped my method below: We start by creaming the butter and sugar for 1–2 minutes until light and fluffy. After the first minute, scrape down the sides, then continue mixing to get that perfect creamy texture. Add all dry ingredients, followed by the eggs. Then mix for 50 sec / Speed 2.5 / Reverse. Scrape down the sides and mix again for another 10 sec / Speed 2 / Reverse just to bring it all together. Then comes the best part—chocolate chips! Stir them in gently for 30 sec / Speed 2 / Reverse. Transfer to a non-stick surface, shape the dough into a ball, and weigh out your cookies—I went big at 130g each, but you can easily halve that for kid-size portions. Top trick: Freeze before baking! I froze mine for 1–2 hours, then baked at 180°C for 20 minutes. Just make sure they’re spaced out well so they don’t spread into each other.
