Here are the tips I wish someone gave me earlier… real, practical, and actually useful for self-taught bakers🥰 1.Mixing speed matters. Low–medium is for combining; high speed only when creaming butter + sugar. Too fast after adding flour = dense cake. 2.Crumb is everything. The moment flour goes in, fold gently and stop as soon as it’s combined. Extra 20–30 sec can ruin the texture. 3.Room-temp ingredients aren’t optional. Cold eggs or butter = tunnels, holes, or gummy streaks. Let them sit 20–30 mins. 4.Stop mixing as soon as the batter looks combined. There are a few key things that make all the difference— between a flat cake and a tall one, between a fluffy, moist cake and one that’s dense and dry. And the differences aren’t just in the recipe. In fact, you can get both kinds of cakes I just described from the exact same recipe. It has much more to do with how the cake is baked, and how you store and handle it after baking— all the way through to the decorating stage. These are tips I really want to explain in detail, because they can make a huge difference for you! And believe me— I spent years tweaking my recipe over and over… until I realized the recipe was never the problem! 1. I recommend baking your cake low and slow — a lower temperature for a longer time. This way the outside doesn’t dry out while the inside is still raw, and you get a super soft, moist cake. 2. Place a regular baking tray on the top rack of the oven. This blocks direct top heat from hitting your cake, helping it bake flat and evenly. The cake itself should sit on the middle rack, on a regular oven grid. 😚 3. Personally, I love baking in a baking pot (like a jachnun pot or cake pan with tall sides). I grease the whole pot first — it makes it easy to stick down the parchment paper. I cut a round piece for the bottom and clean strips for the sides. 4. For tall sponge cakes or tortes, I don’t open the oven for the first full hour, sometimes even an hour and a half! (For shorter cakes like my “Gan Eden” cake, it’ll take less.) Opening the oven too soon disrupts the slow setting of the center and can cause the cake to collapse. 5. Once the cake is out of the oven, I let it rest with a towel over it. After about 30 minutes, I flip it onto a plate and wrap it tightly in plastic wrap — this trick is magic! The steam stays trapped inside, and the cake stays incredibly moist and soft. 🍰 Here are a few of my favorite tips when working with cakes: -After baking, let the cakes cool IN the cake pan for about 20 minutes. -Trim off any rounded tops -Set on a cake board to keep level -Cut in half while room temp -Place parchment paper in between layers so they don’t stick together. -Put in FREEZER for at least 3-5 hours. I usually bake a lot at night, and freeze overnight. And if you are wondering, the freezer does not dry out your cake. It actually does the exact opposite. It will lock in the moisture, and help your cakes stability.
