Let’s talk beeswax! I make beeswax wraps, which starts with a block of solid beeswax. Yes, I use a hammer and chisel to break it apart—and yes, it’s really that hard! Beeswax is naturally solid at room temperature, and in colder climates like mine, it takes a hammer and chisel to break it up. A lot of you were curious about the white coating on some of the wax chunks. That’s called bloom. It’s completely normal and happens when natural oils rise to the surface—kind of like how chocolate sometimes gets that powdery look. It doesn’t affect the quality of the wax at all. You might’ve noticed the color differences too. Beeswax can range from pale cream to deep golden yellow depending on the age of the wax, how much pollen or propolis is in it, what the bees were foraging, and how the wax was filtered. Every batch is a little different, but it all melts down and functions the same. Have more questions? 🍫Behind the scenes in the Nostalgia kitchen… This weekend I spent some of my time prepping the cocoa butter I use for milk chocolates, white chocolate and all of the Baker’s Chocolate that I make. This is a very important step in the chocolate process because it adds some extra fat to the chocolate to help it melt easier in your mouth and also makes it easier to work with for home bakers and my restaurant partners. The origin of the cocoa butter I use is @kokoakamili which is from Tanzania that I purchase through @meridiancacao. I start off with this big block of 55lb solid cocoa butter. Using a hammer and chisel, I break it up into pieces and sort it into buckets that I use to safely store the cocoa butter until I need it.
