the softest, fluffiest, perfectly sweetened cinnamon rolls i’ve ever made 🤎 CINNAMON ROLLS RECIPE 🧸 INGREDIENTS: (dough) - 3/4 cup warm milk - 2 1/2 tsp instant yeast - 1 tbsp sugar - 1/3 cup sugar - 2 eggs (whisked) - 3 cups all purpose flour - pinch of salt - 1/4 cup melted butter (filling) - 1/2 cup butter (room temp) - 1 cup (demerara) brown sugar (packed) - 2 tbsp cinnamon - eyeball some nutmeg (caramel for baking dish) - 1/4 cup brown sugar - 1/4 cup softened butter (cream cheese icing) - 1 block cream cheese (room temp) - 1/3 cup butter (room temp) - 2 splashes vanilla - 1 1/2 cup icing sugar - 2 tbsp milk (for baking) - heavy cream (1 tbsp for each roll) DIRECTIONS: 1) Add yeast + 1 tbsp sugar to warm milk, stir and let that stand for 10 minutes to activate the yeast 2) Add the rest of the dough ingredients to a bowl, add the yeast mixture and mix with a spatula until a dough forms. Then mix it in a stand mixer on the lowest setting with a dough hook for 8 minutes (dough will be slightly sticky) 3) Place the dough in a lightly floured large bowl and cover with a damp cloth. Heat your oven to 175F until it warms up, turn it off and let your dough rest in there for 2 hours 4) Combine your filling ingredients, roll out the dough, spread out the filling, use a pizza cutter to cut rolls (you do want thinner strips since they’re gonna rise to get about 9-12 rolls). Make your caramel by whisking the ingredients until lighter in colour, then spread it on the bottom of a 9x13 ceramic dish. Place 8 rolls and cover again with a damp cloth for another 30 minutes on your counter (for any extra rolls make sure to bake it in a smaller ceramic dish where the rolls will touch and bake together + add more caramel to each baking dish) 5) Add 1 tbsp heavy cream to each cinnamon roll, then bake at 350F for 25 minutes 6) For the cream cheese icing, blend all the ingredients in a food processor, then spread onto hot cinnamon rolls (perfectly sweetened and has a thinner consistency) #cinnamonroll #baking #aestheticbaking #dessert #recipe

I kid you not the best cinnamon rolls I’ve ever had😩 here’s my recipe : DOUGH • 240g warm whole milk • 7g active dry yeast • 67g granulated sugar • 1 whole egg (50g) • 1 egg yolk (18g) • 57g melted unsalted butter • 390–420g all-purpose flour • 5g salt • 15g heavy cream (optional but makes them softer) FILLING • 113g softened unsalted butter • 200g dark brown sugar • 16g cinnamon • 8g cornstarch CARAMELIZED BOTTOM • 57g unsalted butter (softened) • 2 tablespoons granulated sugar • 3 tablespoons dark brown sugar CREAM CHEESE FROSTING • 113g cream cheese (softened) • 57g unsalted butter (softened) • 120g powdered sugar • 5g vanilla extract • Pinch of salt • 15–30g milk if needed ⸻ ⭐ INSTRUCTIONS 1. Mix warm milk + yeast + 1 tbsp sugar from the 67g you measured. Let sit 5–10 mins until foamy. 2. Add the rest of the sugar, egg, yolk, and melted butter. Mix. 3. Add flour + salt slowly. Knead 8–10 mins until dough is soft, smooth, and slightly tacky (not sticky). 4. Cover and let rise 1 hour until doubled. I usually place mine in a oven that I preheated and turned off 5. After an hour roll the dough out into a rectangle, spread filling evenly, roll up tightly, and slice into rolls. 6. Place rolls in baking dish that has the caramelized mixture on the bottom. 7. Let rise 30–45 mins or until puffy. 8. Pour little amount of heavy cream over the rolls 9. Bake at 350°F for 19–22 mins — pull them when they’re just golden for maximum softness. 10. They are topped with a creamcheese icing on top for extra flavor! 💫 Here’s what you’ll need: Dough: 550 g all purpose flour 200 ml luke warm whole milk 2 eggs (around 100 g of egg in total without shell) 100 g butter (room temp) 40 g fresh yeast or 12 g instant yeast 70 g sugar A pinch of salt Cinnamonfilling: Mix the following ingredients together: 150 g butter 150 g brown sugar 4-5 tsp of cinnamon Creamcheese icing: Whisk the following ingredients together: 100 g creamcheese 30 g powdered sugar 1 tbsp vanilla Dough Instructions: 1. Add the yeast in luke warm milk and stir till it dissolves. 2. Add the eggs, sugar and salt and stir again. Add the flour 3. With the dough hook attached to your kitchen machine, kneat the dough on medium speed for 3-4 minutes and add the butter. Increase the speed and mix for 8-10 minutes on high until you reach a “slippery dough”. 4. Let the dough rise in a warm place for 1 hour. 5. After the dough have rested, it’s time to make the cinnamon buns. Dust some flour on the surface of your table and roll it into a 30x40’ish cm. rectangle. Spread out the cinnamonfilling and roll it up! 6. Cut the cinnamon roll into 12 equal rolls using some thread. Line the buns in a an ovenpan that fits around 12 rolls. 7. Cover the tray with plastic foil and a dishtowel and let them rise again for 40 minutes. 8. Bake at 200 °C (fan) for around 20-25 minutes covered with alluminium foi to prevent top from browing. 9. Ingredients Yeast mixture: 2 1/4 tsp instant dry yeast 1 1/4 cup whole milk, slightly warmed ( between 90-110 F). 1 tsp granulated sugar For the dough: 4 1/2 cups all purpose flour 1 beaten egg, room temp 1 tbsp vanilla bean paste 6 tbsp salted butter , softened 1/3 cup granulated sugar Yeast mixture For the cinnamon sauce: 5 tbsp unsalted butter, softened 1 tbsp cinnamon 1 tsp vanilla bean paste 2 tbsp heavy whipping cream 2 tbsp honey 1/3 cup light brown sugar For the filling: 3/4 cup light brown sugar 2 tbsp cinnamon 1/2 cup unsalted butter, melted For the frosting: 6 tbsp unsalted butter, softened 3/4 cup powdered sugar 1 tsp vanilla bean paste 6 oz cream cheese, room temp 3 tbsp milk ( less or more to adjust the consistency ) Method: In bowl add warmed milk , instant yeast mix, sugar. Mix and leave for 10 min or until bloomed. In a stand mixer bowl or mixing bowl add 2 cups all purpose flour, sugar and salt. Mix well to combine. Add in softened butter, egg, yeast mixture, vanilla beans paste. Mix with dough attachment hook or by a spoon for 2-3 until combined. Add in rest of the flour. And knead the for 8-10 min until a smooth dough ball forms. Place in a greased bowl , cover and leave it in a warm place for 1 hour or until it doubles in size. Prepare the cinnamon sauce by mixing softened butter, cinnamon, brown sugar, honey, vanilla bean paste and heavy whipping cream. Prepare the cinnamon filling by mixing cinnamon and brown sugar until well combined. Once the dough doubles in size roll it out into rectangular shape(1/4 inch thick). Spread melted butter on top. Sprinkle cinnamon sugar evenly all over. Roll it out tightly into a long log, cut 10-12 equal size rolls with a sharp knife or thread. Take a baking dish and spread Cinnamon sauce evenly on the bottom. Place rolls on top, cover and leave them in a warm spot for 30 min to proof again. Prepare frosting by beating the ingredients listed above until smooth. Preheat oven to 350 F . Bake the buns for 28-30 min or until golden brown.
