Last September, I had the incredible opportunity to visit a fruitière, a traditional cooperative creamery where local producers pool their milk to make one of France’s most beloved cheeses: Comté. These creameries are located in the Jura mountains, the only region where Comté can legally be made. Around 134 fruitières produce the large wheels, each weighing more than 80 pounds. The milk mostly comes from Montbéliard cows raised on about 2,300 small farms, all located within roughly 15 miles of the creameries. It takes about 400 liters of milk, or around 105 gallons, to produce a single wheel. That is roughly the daily production of about twenty cows. Comté is a raw cow’s milk cheese that must be aged for at least four months, although many wheels mature for much longer, often between 6 and 36 months. During that time, the flavor continues to develop and evolve. No two batches taste exactly the same. Depending on the season, the milk, and the aging process, you might notice flavors of toasted nuts, fruit, butter, or even caramel. The specialists who age these wheels, known as affineurs, have identified at least 83 different aromas and flavor notes in Comté. People often ask me what my favorite cheese is, and I always hesitate because the answer changes all the time. But Comté is almost always in my top three. Someone once told me that the French eat as much as three times the weight of the Eiffel Tower in Comté every year. I do not know if that is true, but I understand why. This cheese is phenomenal. It is perfect on a cheese board and just as incredible when melted. Visiting the Jura to see how it is made was truly special. As a cheesemonger, it felt like filling an important gap in my journey. Watching one of the most traditional and beautiful cheeses come to life right in front of me was an unforgettable experience. Thank you, Comté, for the memories.
