Leeks vinaigrette. One of the great French standards. Leeks gently braised until just tender and finished with a proper Sauce Gribiche — capers, herbs, egg, acidity. A great example of the sort of simple, delicious, French food that relies entirely on technique. * Trim your leeks and give them a really good wash * Place them in a shallow pot with some white wine & aromats * Bring them to a boil then reduce the heat to a gentle simmer & cover * Once tender, allow them to cool slightly in the liquid before removing * To make the Gribiche, chop boiled egg, capers, gherkins & parsley * Mix with mayonnaise, mustard, a little extra virgin oil then season well with salt * Lay your leeks onto the plate and top with generous spoonfuls of your Gribiche

My favorite winter salad 🍊🥗 It’s a little family tradition I love keeping alive. My mom used to make this all the time, and now I do too! You just need endives, oranges, walnuts and your favorite cheese (for me it’s comté, my mom use to add mimolette, you can do it with cheddar or gouda too). Even if you’re not an endive fan, the walnut-orange vinaigrette really softens the bitterness perfectly. For the salad: 3 chicory heads 120 g Comté or strong hard cheese (4.2 oz) 1 blood orange 1 orange or mandarin 75 g walnuts (1/2 cup) Dill Walnut oil vinaigrette: 1 tsp whole-grain mustard Juice of 1 orange (1/4 cup) 1 tsp honey 3 tbsp walnut oil salt & pepper You can also find the recipe in my link in bio and on my blog. I’ve used their peeler to make an easy and delicious courgette ribbon salad, and a quick dressing with their garlic press and citrus juicer.  Recipe  Makes 2 portions  2 small courgettes, washed and peeled into ribbons  1 clove garlic, pressed 1 lemon, juiced 1 tbsp parsley leaves, washed and picked 1 tbsp dill leaves, washed and picked 1 tsp tarragon leaves, washed and picked Small handful rocket leaves, washed 2 tbsp green olives, pitted and halved lengthways 2 heaped tbsp ricotta 2 tbsp olive oil  Salt and pepper  1. Mix together the lemon, olive oil, salt and pepper 2. In a large mixing bowl stir together the courgettes, herbs, olives and dressing 3. Arrange on a serving plate, top with blobs of ricotta cheese
