Hippity-hoppity fun with Beet-Dyed Deviled Eggs 🐰🥚Naturally vibrant and delicious — perfect for spring! 🌸🩷 INGREDIENTS For beet juice • 1 cup water • 1 cup apple cider vinegar • 1 tsp salt • 2 large beets, shredded For eggs • 6 eggs • ⅛ cup greek yogurt • ⅛ cup mayo • ½ tbsp Dijon mustard • 5-6 cornichons (depending on size), minced • sea salt to taste • fresh chives, minced for garnish DIRECTIONS, makes 12 deviled eggs • Peel beets. Prepare a pot with water, apple cider vinegar and salt. Shred or slice beets into this mixture, making sure they’re covered with liquid. Bring to a boil over high heat, then simmer for about 5 minutes. Let cool. Drain the beet juice from the shredded beets. Feel free to reserve beets for another use, like adding to a salad. • Add eggs to a pot then cover with water. Bring to a boil over high heat. Once boiling, put on a lid and cook for 10 minutes. You can turn down the heat a bit so it doesn’t boil over. Meanwhile, prepare a bowl of water with ice. When done, drain the eggs then place them in the ice water bath. Let cool. When cooled, peel eggs. • Place the peeled eggs into the juice for at least 3 hours, or overnight in the fridge for a more vibrant color. • Remove dyed eggs from juice onto a paper towel. Slice eggs in half then scoop out yolk into a bowl. Set white aside. Mix together yolk, greek yogurt, mayo, dijon, minced cornichons and salt. Fill each egg white with a scoop of the mixture. You can use a piping bag or 2 spoons for this. Feel free to garnish with chives or other herbs of your choice.

Don’t ask me how many deviled eggs I’ve eaten this week okay? The perfect little Easter or spring party apps!

Every time I bring these deep fried deviled eggs to a party, they fly off the tray. They are so delicious and it’s very easy to eat too many of them. I always get so many compliments and once even got $50 from an uncle who was so impressed by these delicious deviled eggs. Deviled eggs Ingredients: 6 hard boiled eggs 3 tbsp kewpie mayonnaise 1 tsp Dijon mustard 1 tsp sriracha 1 tsp pickle juice 1/2 cup AP flour 3 eggs, beaten 2 cups seasoned panko breadcrumbs* Oil for frying To garnish: Chili crisp Scallions Seasoned panko breadcrumbs: 2 cups panko breadcrumbs 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp dried parsley 1 tsp dried oregano 1 tsp salt - adjust to taste Instructions: Step 1: Hard boil the eggs and cool in an ice water bath. Then shell them, cut them in half and separate the egg whites and yolks. Step 2: Mix the yolks with mayo, sriracha, mustard and pickle juice. Mash with a fork or if using a blender, do it in short bursts or the mixture will split. Make sure the yolks are completely cool or it will split! Step 3: Pat down the egg whites to remove excess water, then coat them in flour, egg wash, then panko breadcrumbs. Let them sit for a few minutes, then dip them in the egg wash and breadcrumbs again so none of the white part is exposed. BE FOREWARNED- this part is hard! Step 4: Heat oil in a heavy bottom pan to 350 degrees F, pop the egg whites in for about 2 to 3 minutes until the panko is golden brown and crispy. Do not overcook them. Step 5: once the egg whites have cooled, pipe in the yolk mixture, then finish with chili crisp and scallions, and enjoy immediately!
