I was planning to measure everything for this easy devilled pork dish but unfortunately it was already lunch time when I started making it. I'll give some rough measurements for now. Will do a proper blog post sometime later. 🔸First cut 600g of pork (i did measure this 😄) into small pieces. And then add ½ tsp baking soda, chili powder, about 1 tsp salt, a bit of turmeric and some black pepper. Let it marinate overnight or at least a few hours. What baking soda does is, it raises the pH level, making the meat more alkaline. This alkaline environment encourages the proteins in the pork to break down, resulting in a tender texture. 🔸Fry pork pieces until they start turning golden in color. Transfer them to a separate bowl. I fried them in two batches. 🔸Keep about 1-2 tbsp of oil in the pan and remove the rest. (or use a new pan). Add 4 cloves of garlic minced, curry leaves, pandan leaves. Saute for a few seconds.  🔸Lower the heat. Add some chili flakes (I use Korean chili flakes/gochugaru cause they add a nice bright red color to the dish without making it too spicy), chili paste for some umami, and salt. Saute.  🔸Add about ¼ cup of ketchup, about 2 tsp light soy sauce, mix well.  🔸Add banana peppers, onion, slitted green chili and fried pork. Mix again.  🔸Add a little bit of sweet soy sauce or sugar to your taste. This helps to balance out the flavors.  🔸Finally mix in a large tomato cut into wedges. Hope you give it a try!! Sri Lankan Devilled Fish! Addictive for sure! 500g boneless fish (I’m using cod but feel free to use fish of your choice) 1tsp salt 1tsp pepper 1/2tsp turmeric 1/2tsp chilli powder 1/4 lemon or lime juice 1) mix well first before adding the flour etc 2tbsp flour 2tbsp corn flour 1-2tsp water 2) marinade and keep for around 15mins. Then fry in neutral oil at 180c for 4-5mins (depending how thick you’ve cut your fish) 1/2 onion cut into chunks 5 cloves of garlic chopped 1 inch piece ginger chopped 1/2 green capsicum cut into chunks 1/2 red capsicum cut into chunks 1 green bullhorn pepper cut into chunks 1/2 tomato sliced 4 green chillies split from middle 4 tbsp tomato sauce (can use chilli sauce) 1tbsp soy sauce 1tsp salt 1tsp pepper 3tsp chilli flakes 2tsp sugar 1tbsp water 3) in vegetable oil sauce onion, ginger, garlic and fresh chilli 4) add your vegetables in except tomatoes saute well 5) add all your other ingredients mix well on high heat check for seasoning 6) add your tomatoes and fried fish and carefully mix all in for a minute or so.
