Porous shells let moisture escape and air enter over time, reducing density. A floating egg likely expired, but standing eggs are usually safe. Egg Float Test Breakdown Sinks and lies flat: Very fresh, high quality. Sinks but stands upright: Older, but safe to eat soon. Floats: Likely spoiled or very old; should be discarded. Why It Works Eggshells are porous, allowing gases to escape and air to enter over time, which increases the size of the air cell inside. This makes the egg less dense and more buoyant. Other Tips Crack before using: A fresh egg has a firm, round yolk and thick, high white. An old egg has a watery white and a flat yolk. Smell test: If an egg smells rotten, sulphury, or unpleasant when cracked, it is bad. How long have your eggs been in the refrigerator? Do the eggs have any cracks in the shell? Are you checking store-bought or farm-fresh eggs?

Save this guide for perfect eggs. Fill a heavy-bottomed pot so water covers the eggs by at least 3 cm. 
Bring to a rolling boil. Lower eggs in with a spoon and start the timer immediately. 
For medium size eggs (55–63 g, room temperature): • 5½–6 minutes — mollet (creamy, semi-liquid yolk)
• 7–8 minutes — medium set
• 9–10 minutes — fully set yolk with a slight sheen Transfer immediately to an ice bath (1:1 ice to water) for 5–10 minutes. This stops cooking and makes peeling easier.

Here’s my simple 4-step trick to get a perfect peel every time — and why it works 👇 1️⃣ Tap the fat end on the counter That’s where the egg’s natural air pocket is. Cracking here first breaks the seal between the shell and the membrane, giving you an easy starting point without tearing the egg white. 2️⃣ Tap the narrow end too This loosens the membrane at the opposite end, so it’s no longer clinging tightly to the egg. Think of it as releasing tension from both ends instead of fighting it in one spot. 3️⃣ Roll the sides back and forth with your palm Rolling creates tiny fractures all around the shell and separates the membrane evenly.
